THMVI: Not Butter Chicken

Anyone who is a Skinny knows that Butter Chicken is the recipe that changed my life forever, but when I created this recipe I had the same overwhelming feeling that I had just created something revolutionary for us to enjoy. This recipe doesn’t replace the authentic Butter Chicken found in A Little Taste of India, but it is a quick much lower calorie alternative that is designed to be flavourful and with the added twist of 4 hidden veggies for added nutrition.

    My 3 and 5 year old barely eat any veggies so being able to conceal this many veggies into a delicious dish so seamlessly is an absolute win! Thanks Nik – you’re a genius!

Ok so I’m a big believer in if it ain’t broke don’t fix it and was wondering why Nikalene would try to create another Butter Chicken ( even though called Not butter Chicken. )when her Butter Chicken recipe is the most amazing ( even better then Indian restaurants I’ve tried) but I’ve learnt to not doubt Nikalene’s recipes. So not only did she “ try “ but as always has delivered an outstanding , quick, easy, alternative to the original Butter Chicken, this recipe is really yummy, full of flavour and with the added bonus of vegetable goodness. This will be a regular on our table for sure.
