If you love Lemon Tarts, then this Lemon Curd Chia Pudding is one Thermomix recipe that you will definitely want to make!

Our first free Thermomix recipe for 2026 is the deliciously, tangy Lemon Curd Chia Pudding! Feel free to serve it topped with fresh blueberries or strawberries for some added fresh fruit.

Last year we released the incredibly popular Mango Coconut Chia Pudding and thought a lemon curd version would taste amazing.

You can change the lemon to lime, orange, blood orange or even passionfruit (I would reduce the speed of the curd step to speed 2 reverse so the seeds don’t get blitzed).

We start by making the dairy-free lemon curd to go on top and then the chia pudding. Once you assemble, you can top with some lemon zest.

Perfect for meal prep, a filling breakfast or afternoon tea on a hit summer day. The recipe is dairy-free, gluten-free and refined sugar-free.

What You Will Need:

  • Coconut Milk – I prefer Light Coconut Milk for the lower calories and also flavour. But you can use whatever coconut milk you like. If you can’t have coconut, you can use your milk of choice.
  • Fresh Lemons – fresh lemon juice will always taste best and you use the zest too. Some lemons are sweeter than others, feel free to taste and adjust to taste.
  • Maple Syrup – you can replace with rice malt syrup, coconut sugar, honey (but it will taste stronger) or your low carb sweetener of choice.
  • Vanilla Bean Paste
  • Coconut oil or unsalted butter
  • Eggs
  • Chia Seeds

Lemon Curd Chia Pudding (Easy Thermomix Recipe)

Tangy, dairy-free and delicious. This Lemon Curd Chia Pudding is perfect for breakfast, lunch or a healthy dessert.

Ingredients

Lemon Curd

  • 3 eggs
  • 50-80 g fresh lemon juice - approx 2-3 lemons
  • Zest of 1 lemon - finely grated
  • 40-50 g maple syrup or honey
  • 30 g coconut oil or unsalted butter - (dairy-free if required)
  • 1 tsp vanilla bean paste
  • 1 pinch salt

Chia Pudding

  • 400 g light coconut milk - or milk of choice
  • 80 g chia seeds
  • 30 g maple syrup
  • 1 tsp vanilla bean paste

Instructions

  • Add eggs, lemon juice, zest, maple syrup, coconut oil, vanilla and salt to mixer bowl. Cook for 8 min/80°C or 175°F/speed 4/MC on. Scrape and transfer to a bowl and allow to cool.
  • Add coconut milk, maple syrup and vanilla to mixer bowl. Mix for 10 sec/speed 3/MC on. Add chia seeds and mix for 10 sec/reverse/speed 2/MC on. Scrape bowl down.
  • Cook for 5 min/37°C-100°F/reverse/speed 2/MC on. Transfer to jars or glasses and allow to cool slightly. You can make 4-6 serves.
  • Spoon cooled lemon curd over chia pudding. Refrigerate at least 1 hr to set.
  • Serve chilled and store in the fridge covered for 3-4 days.

Notes

Protein Boost - Feel free to replace some of the sweetener and vanilla in the chia pudding with some vanilla protein powder.
Low Carb - Use compliant sweetener.
Low Fodmap - Replace half the coconut milk with compliant lactose-free milk if desired.  Use maple syrup.
Halved - This recipe can be halved, leave cook time the same.
Doubled - Stir chia seeds through with spatula. Leave cooking times the same. The curd does thicken in the fridge but you can extend cooking time to your preferred consistency.
