What kind of corn can I use?

  • I highly recommend using fresh corn cobs for this recipe, however using drained tin corn or frozen corn with the stovetop method is still delicious!

Different Cooking Methods

  • My favourite method for cooking this Mexican Street Corn Salad is the Smoker method. The extra smoky charred taste adds an extra layer of flavour! 
  • We also have Thermomix steaming instructions
  • Plus Stovetop instructions to be able to char frozen corn or tinned corn in a frypan.
  • You can also grill the corn cobs on the BBQ for a lovely charred flavour.

  • 4 large corn - or 600g | 21.2 oz corn kernels
  • Creamy mayonnaise
  • cumin powder
  • honey
  • Greek yoghurt
  • queso fresco or mild Danish feta
  • fresh coriander leaves
  • fresh jalapeño
  • garlic
  • avocado
  • fresh limes
  • red or white onion
  • ripe tomato
  • sweet paprika

Instructions

Notes

Serve as a barbecue side or topping for tacos. Garnish with crumbled cheese and jalapeño slices if desired.
