These Miso Caramel Mochi Brownies are seriously out-of-this-world good.
The chewy marshmallow like brownies with the umami miso caramel and rich chocolate, it’s so hard to explain but you need to try them!
The best part is that they are made with glutinous rice flour and completely gluten-free (don’t worry although the name is misleading there is actually no gluten!). IMPORTANT: You can’t replace the glutinous rice flour in these.
Tip: To mill your own glutinous rice flour in the thermo cooker. Before starting the recipe add glutinous rice (this is special sticky rice) to mixer bowl or blender. Blend for 2 min/speed 9/MC on or until flour.
Don’t go past the Chubbymixers tip in the book either to make them with a block of Lindt dark chocolate added.
What you will need:
- Miso Paste – we typically use white miso paste and you can purchase it from major supermarkets and Asian grocers.
- Glutinous Rice – is actually gluten-free. You can purchase it sometimes from major supermarkets, but definitely from Asian grocers. We also have a tip on how to mill your own in the cookbook (blend for 2 min/speed 9/MC on) so you can use the Sweet Rice/Sticky Rice from the Mango Sticky Rice recipe. You cannot replace this with any other rice or flour.

Egg Free: Omit eggs. Add butter in step 2. Reduce total cooking time to 40 min or until cooked.
