Easy Chicken Nuggets in the Thermomix

Gluten Free Chicken Nuggets with Hidden Veg are gluten free, grain free, egg free & also have a nut free variation.

Perfect for the school lunchbox or to freeze raw for a fast nutritious dinner for the kids. Using the Thermomix means that you can achieve the perfect texture & hide some extra vegetables in the recipe.

Introducing Jackpot Nuggets !

Simply divide the crumb mixture by 4…
To one portion of crumb add a 1 tsp of Queen of all BBQ Chicken rub from SkinnyBarbecue… with the remaining portions of crumb do the same with Jack of all Lamb Rub, Ace of all BBQ Rub & The Joker’s Chicken Rub. ❤️🎰
 
Crumb your nuggets & cook as desired following the recipe.

It would be a fun palate testing game for the kids to see if they can pick which nugget corresponds to which rub too! ⭐️

Grain Free Chicken Nuggets

Ingredients

Crumb Ingredients:-

  • 100 g almonds - or breadcrumbs or sunflower seeds
  • 20 g sesame seeds
  • 1 tsp sumac - or paprika
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • pinch of pepper
  • pinch of salt

Nugget Ingredients:-

  • 50 g Parmesan cheese - cubed
  • 80 g zucchini - roughly chopped (peeled if kids dont like green bits!)
  • 80 g carrot - roughly chopped
  • 500 g chicken breast - cubed
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • pinch of pepper
  • oil of choice for frying

Instructions

  • Add crumb ingredients to mixer bowl, mill for 10 sec/speed 6/MC on. Set aside on a plate.
  • Without washing the bowl, add Parmesan cheese to mixer bowl, mill for 10 sec/speed 9/MC on.
  • Add zucchini and carrot to mixer bowl, blend for 10 sec/speed 5/MC on. Scrape bowl down and repeat if your kids are fussy about hidden vegetables.
  • Add remaining ingredients, excluding oil, and blend for 15 sec/speed 6/MC on.

Assembly:-

  • Take walnut sized balls of mixture, roll and flatten to a nugget shape. Coat generously in crumb mixture and set aside. Repeat with remaining mixture.

To Cook:-

  • For the best results, shallow fry on a medium to high heat until browned on both sides.
  • You can also bake in a 200°C or 400°F preheated oven for 20 minutes, turning once half way through.

Notes

You can make these nut allergy friendly by either using breadcrumbs or sunflower seeds.
Play around with the crumb mixture with the available spices you have on hand.
You can increase the chicken to 700 grams or 24.7 oz without having to adjust any of the other ingredients, there will be enough crumb to stretch.
You can blend the crumb mixture for longer, to reduce the crunch/texture.
Bellini Users
Use sharp blade for this recipe.
At step 1 chop for longer if required.
At step 3 repeat if vegetables aren't fine enough.
At step 4 use speed 7 and for a little longer if necessary.

  4. Delicious! Made half the quantity and it worked well. Cooked half on the frying pan and half in the airfryer, pan frying was def a crispier and tastier outcome.

  5. I made this but the carrots made it a bit too sweet. I tried again the next time adding 180g total of basil, bok Choy, broccoli, snow peas and spring onion and it was awesome. Couldn’t be bothered with the crumb so used some leftover KFC coating and they were really good!

  6. Thanks for the recipe! I was disappointed when I went to the freezer and only had 300g of chicken, so I managed to add 80g of onion and 120g mix of sunflower seeds/peanuts/sesame seeds and an egg and it still worked out. Kids ate heaps. Thanks!

  7. Made these on the weekend. Miss 7 has requested these weekly, and Master 10’s friend asked where I bought them from. 🙂 Oven baked them with extras prepped and frozen for a quick midweek meal. They’ll definitely be on regular rotation in this happy household…

  10. I made these today for lunch and everyone love, love, loved them. My fussy 9 yr old said can we have them for dinner tonight too. I added some capsicum too that was I my fridge and they made them a pretty orange colour. I also used Panko crumbs and lightly fried them before finishing off in the oven. Next time I will employ child labour to roll them in crumbs because I know they will be a staple in this household. Thanks Nik for another delicious recipe

  17. Thanks Nik! Another winner in our family! I used the 700gm chicken and baked in the oven. Kids and hubby loved them! I froze (already cooked) the 8 that I had left over and they went into Miss 7’s school lunch box (frozen – thankfully I had made the version with sunflower seeds, so they were school friendly) on two occasions. They thawed in time for lunch. She loves having them in there with a little container of sauce for dipping. Absolutely brilliant.

    I double this recipe and made this twice for a party and to store in the freezer (stored cooked).
    They thawed easily and recrisped in the oven. Sooo yum!

  34. by far the most amazing chicken nugget recipe I have found! My kids love them, the adults love them. The only problem is, I can never make enough. Just the right texture to make you feel like you’re eating something naughty- but it’s actually incredibly good for you. I had to sub the carrot for pumpkin, because (goodness knows how) I ran out of carrots- still turned out perfect! Thanks Nik- brilliant once again!!

  36. Used breadcrumbs, smoked paprika and had no zucchini, so doubled the carrot. The result was some apparently perfect nuggets that hubby and Z loved, and L refused to try (let’s face it, what else is new with him).

  42. Made these tonight after Miss13 saw this post. Couldn’t get zucchini so I replaced with Japanese cucumber. Left out onion powder coz I didn’t have it. So easy to put together though it was a bit fiddly shaping & coating the pieces. Managed to get 20 nuggets. Miss13 chomped down 10! She gave a big hug and said “Thanks for the awesome nuggets, Mum” Will definitely be making these again.

  43. These were amazing! Added some chilli to the crumbing for a little more spicy. Next time I’d probably add some more spices but still great!
