I love a good Chicken Parmie, but every time I order one, I end up terribly sick as it wasn’t gluten free 🙁 So I gave up my love for oversized parmies many years ago.

Grain-Free Chicken Parmie – A Healthy Aussie Classic, Skinnymixed

Is there anything more Aussie than a pub-style Chicken Parmie?

This Grain-Free Chicken Parmie takes everything you love about the classic—crispy crumbed chicken breast, rich napoletana sauce, and golden bubbly cheese—and gives it a healthy, whole food makeover, Skinnymixers-style.

Whether you’re low carb, grain-free, gluten-free or just want a better-for-you version of a pub favourite, this Thermomix-friendly recipe is the real deal. All the flavour. All the comfort. None of the heaviness.

Why You’ll Love This Chicken Parmie

✅ Crispy crumb without the carbs – Using a clever mix of grain-free ingredients, this coating gives you the golden crunch without breadcrumbs or flour.
✅ Healthy pub vibes at home – Satisfies that Parmie craving without needing to roll yourself home after dinner.
✅ Thermomix friendly – From grating cheese to blitzing the crumb to simmering the perfect sauce, your Thermie makes it easy.
✅ Family & freezer friendly – A total crowd pleaser, and great for meal prepping or freezing extra schnitzels for busy nights.
✅ Gluten-free, grain-free, low carb – With dairy-free options included!

What You’ll Need

  • Chicken Breast Fillets – Butterflied and bashed to perfect schnitzel size.

  • Skinnymixers Grain-Free Crumb – A blend of nuts, seeds and herbs for that crunchy coating without flour.

  • Egg – Helps the crumb stick and gives it that gorgeous golden colour when pan-fried.

  • Basic Napoletana Sauce – Made from scratch in your Thermomix—it’s rich, simple, and better than any jar using our Homemade Italian Spice Mix.

  • Cheese – Because it wouldn’t be a Parmie without it. Choose your favourite melty cheese (or dairy-free alternative).

💡 Dairy-Free or Paleo? Leave off the cheese or use a DF melting cheese substitute—the sauce and crumb are full of flavour on their own.

Dinner tonight is @mayurastation beef schnitzel from @mylocalbutcher turned in to Parmis using my recipe from The Healthy Mix II – home made chips for the kids & salad for moi. Who needs the pub anyway… 😭 me… I need the pub! #unsponsored #skinnymixer #skinnymixers #thermomix #thermomixaus #wagyu

How to Make It

  1. Prepare the Crumb – Blitz your nut/seed mix in the Thermomix until you’ve got a crumb with texture (not dust!).

  2. Crumb the Chicken – Dip in egg, coat in the crumb, and fry until golden and crunchy.

  3. Top It – Add your homemade napoletana sauce and a generous handful of cheese.

  4. Bake Until Bubbly – Finish in the oven until the cheese is golden, gooey and irresistible.

Serve it up pub-style with salad and fries—or go low carb with zoodles or steamed greens.

Course: Dinner
Prep Time: 5 minutes
Cook Time: 6 minutes
Total Time: 11 minutes
Servings: 4

Ingredients

Crumb Ingredients

  • 50 g sesame seeds
  • 50 g sunflower seeds - or raw almonds or bread crumbs
  • 2 tsp italian herb mix - from the supermarket
  • 1 tsp onion powder
  • 1/4 tsp salt
  • 1/4 tsp pepper

Parmie Sauce Ingredients

  • 150 g tomato paste
  • 50 g semi dried tomato
  • 50 g roasted capsicum
  • 15 g water
  • 5 g olive oil
  • 1/4 tsp Italian Spice Mix
  • 1/4 tsp salt
  • pinch of pepper
  • pinch of dried chilli flakes - this is optional, but HIGHLY recommended - it isnt spicy!

Chicken Parmie Ingredients

  • 500 g raw chicken breast - cubed
  • 1 egg
  • 1 tsp salt
  • 20 g of reserved crumb mixture

To serve

  • Oil to fry
  • Cheese of choice - I used baby bocconcini

Instructions

  • Add crumb ingredients to a dry mixer bowl, chop for 3-5 sec/speed 5/MC on. You want to have a crumb texture, not powder. Set aside on a large plate.
  • Without washing the bowl, add your paste ingredients and chop for 5 sec/speed 5/MC on. Set aside in a bowl, ensuring to scrape out as much of the sauce as possible.
  • Without washing the bowl, add chicken parmie ingredients and process for 40 sec/speed 9/MC on.
  • Divide the chicken mixture into 4 or 6, with damp hands and form into 2 cm steaks. I found putting a portion of the chicken mixture onto the plate of crumbs, and pressing it out onto the crumbs the easiest way.

To Cook

  • Pre heat a frying pan to medium high heat with preferred oil. Also pre heat your grill to medium high.
  • Fry your schnitzels for around 3 minutes on one side so its golden brown, then flip and fry for around 2 minutes. You dont want to overcook them as they will continue cooking under the grill.
  • Top each schnitzel with your reserved parmie sauce, then cheese and grill until golden brown.

  1. I made these the other night and was happy with how quick and easy they were to prepare & cook. They were delicious, super juicy and I really loved the crumb texture of the almond & sesame seeds. I’d happily make these again, my family loved them.

  2. These are so yummy and so easy. The recipe made a double batch and put the seco d lot un the freezer for a quick yummy dinner!

  3. I’ve never liked chicken parmies before but this one was delicious. My husband and kids both enjoyed it too. One child had it without the sauce and I just grilled cheese on top. Will definitely make again. Thank you.

  4. Made these the other night… Delicious! I didn’t have a couple of the ingredients but still made without them and still tasted awesome… I wondered how much more awesome they will be with ingredients I didn’t have 🙂 (I have purchased the ones I didn’t have already for next time :))

  5. Just made these for dinner – as everyone else has said “AMAZING!!!”. My only minor stuff-up was not knowing how long to grill them for at the end or what temp to set the grill to- and so ended up slightly burning them. But lucky for me I don’t mind a slightly burnt flavour 🙂 🙂 Served mine with a light salad just like you might get at a pub & I was in foodie heaven! Why would you pay for a parmie when these can be made so easily and TASTE BETTER?!!!! Thanks Nik!!

  6. This was a winner with the whole family (including my 3 year old which I made ‘Nuggets’ for using smaller amounts of the chicken mixture) I served it with some of the silky sweet potato mash and some corn. A quick and easy meal – definitely will be on high rotation around here!

  7. Love, love, love this recipe! It is delish and so so easy to make. Made of my family and my three children, 2 5 &9 gave it the thumbs up and want it on the list to make again.

  8. Miss 12 made these last night and saved one for her lunch box this morning. So quick and easy and oh so very lush and tasty. Will definitely be a regular here. X

  9. OMGeeee! Who needs to go to the pub when you can create this super delicious chicken parmie dinner at home? I made a double batch of the sauce because I kept reading people rave about it and I’m so glad I did! I will freeze it for use when I make these next OR I might even use it on pizzas or scrolls. It is soooo yummy!!! Thank you again Nik x

  10. We just had this for dinner. I made it exactly to the recipe and it was so good. Will definitely make these again. So quick and easy too.

  11. Errrr….yes. Just had this for dinner, I ate double my normal portion size. So did my 4yo son. Too bad for my gorgeous hubby who’s not home yet! Few notes: I had to chop my crumb ingredients for about 12 seconds before the sunflower seeds broke down. I followed the cooking times pretty much exactly and it worked a treat. I cooked them in butter. This recipe will enter my monthly meal plan without a doubt. Thank you again, Nik.

  12. So yummy. I changed the sauce a little to suit our tastes – extra capsicum as we don’t like sun-dried tomatoes and I didn’t have any tomato paste so I used leftover pizza sauce from the mexican shredded chicken pizza recipe and it was delish. Thanks for the recipe 🙂

  13. Made these Sunday night for our friends instead of going to the Pub for Parmies!! Well what can I say amazing!! After previously adapting the Kiev recipes for Parmies, this takes it to the next level!!! Used 4 breasts and doubled everything else adding extra tomatoes to the sauce – ended up with 12 Parmies, enough for hubby and 17 yr olds lunch the next day! All I can say is winner winner and hi fives all round to Nik!! Everyone loved it from our friends 6 yr old to our older teenage kids!! My best friends husband said brilliant, just saved us all $250 at the pub for dinner – she already has a thermomix too so next time we are using both and doing up a huge batch for the freezer!! Just think if you didn’t have a thermomix and regularly go out for Parmies you could pay for your thermie very quickly!! Well that’s what my 22yr old sons girlfriend told him 😆😆😆

  14. Sooo yummy.
We had tonight for dinner. I can easy get two meals from it by serving it with salad, veg and skinnymixers cauliflower rice. Yummmm
I love that one 500g pkt of chicken i can get two meals for 4 adults and two kids 🙂
    Was enjoyed by all.
I think this will be on our meal plan weekly.

  15. Delish!!! I don’t actually like tomatoes or capsicum but decided to try it anyway due to the rave reviews. Once again Nik you didn’t disappoint. Only 2 of us at home so had the leftover snitzel for breakfast then again for lunch. About to use the leftover parmie sauce in a bolognese 😄

  16. Great recipe Nik I used flattered chicken breast & added capers to the sauce just my little twist on it. Loving the almond crumbs will never use breadcrumbs again . 🙋

  17. I made this and got the tick of approval from fussy hubby! He’s not a fan of minced chicken so I just used chicken breast dipped in egg and then crumbed ☺️

  18. So simple and easy to make and tastes just unbelievable! If you are looking for a quick and fast meal these are the best way to go. Thanks Nik You did it again!
