For those who aren’t lovers of oysters, this beautifully vinegary dressing with the subtle sweetness of shallots also goes beautifully on a crisp green salad or other seafood.
We use the little brown French Onion Shallots for this recipe, not the long green spring onions.

- rice wine vinegar or red wine vinegar
