  • Boost the protein – Add a couple more eggs and replace some of the milk with blended cottage cheese.
  • Dairy-free – Use dairy-free cheese or replace with some nutritional yeast. Use your preferred dairy-free milk.
  • Low carb – Replace milk with half the amount of cream. Replace plain flour with almond meal.
  • Lower calorie – Halve cheese and add 1 Tbsp nutritional yeast.
  • Paleo – Omit Cheddar and halve almond milk. Use compliant bacon. Replace plain flour with almond meal.
  • Go veggie – Use vegetable stock concentrate. Replace bacon with vegetarian bacon or sun-dried tomatoes.
  • Low Fodmap – Omit garlic powder. Replace onion with 1–2 spring onions (green part only), sliced. Replace onion powder with dried chives. Use garlic infused olive oil to sauté onion. Use gluten-free flour and lactose-free milk. Use compliant stock concentrate.

How to Cook

  1. Preheat fan-forced oven.
  2. Chop onion and pan-fry with bacon.
  3. Chop zucchini and squeeze moisture out.
  4. Combine all together and bake until set and turning golden.

How to Serve

  • Serve with a simple green side salad.

Storage & Meal Prep

  • Fridge – Keep in the fridge for up to 3 days or freeze.
  • Batch prep – Make mini loaves or muffins for easy freezing.
  • Refresh when serving – in the air fryer or in a sandwich press.

  • Tanya H – I make bacon and zucchini slice regularly but this version was exceptional in flavour. The addition of onion, garlic and parsley elevates it beautifully and adds much more depth.
    Frying the bacon and onion first, then incorporating them back into the mixture, made a noticeable difference to both flavour and overall richness. That step really enhances the final result.
    Texture wise, it was spot on, moist but set and held together perfectly when sliced, not at all watery from the zucchini. Squeezing out the moisture makes a difference. The balance of ingredients worked really well.

I loved that this recipe included pan frying the bacon/onion as I do this anyway when cooking the cookidoo one even though it doesn’t request it. I used GF flour (well and good brand) and you definitely wouldn’t know it’s GF. I loved that this recipe had no added olive oil as the cookidoo one uses heaps and it really destroys the calories. I’ll definitely be making this on the regular but would probably always do a double batch to use more eggs lol. Our chickens are going crazy!

This is my version of a classic Zucchini Slice. I prefer to sauté the onion and bacon to maximise flavour and squeeze some of the water out of the zucchini. This is the perfect dinner to prepare in advance and serve with a salad when ready to eat.

This is to avoid the slice being watery and to improve flavour/texture.
