These Lunchbox Quiches from The Healthy Mix IV cookbook are perfect to cook on Sunday ready for the kids’ lunches throughout the week. Anything that I can make in bulk, freeze, and the kids can grab from the freezer to pack their own lunch boxes is a win for me. It is an even bigger win if there are veggies and the kids enjoy it.

When I first developed these I really wanted them to be hash brown like, however I absolutely adore these hash brown type quiches with added vegetables.

I highly recommend using a silicone muffin tray to stop them sticking, or if your silicone mould is prone to sticking you might like to lightly grease the moulds prior.

    These are brilliant! I put sun dried tomatoes in instead of ham and they are delicious. You do, however, need to follow Nik’s advice on silicone or baking paper liners. Despite my best efforts greasing there muffin tins, they stuck a bit.
