5 Herb & Garlic Spelt Focaccia

The 5 Herb & Garlic Spelt Focaccia was the original Thermomix recipe that I launched my Skinnymixers website with.

To celebrate the launch of the new TM5 in 2014, I decided to release one of my healthy Thermomix recipes which many have asked for in the past!

My 5 Herb & Garlic Spelt Focaccia.

If you haven’t made fresh focaccia before, you are in for a treat. Not only is it super easy, it is so light and fluffy!

It is so incredibly easy to make a homemade focaccia to go with your Coconut Curried Pumpkin Soup.

You can use any herbs that you have on hand for this healthy Thermomix recipe, and you can also use normal plain flour or Bakers flour if you don’t have spelt flour.

Ingredients

  • 1-2 cloves of fresh garlic
  • small handful of parsley
  • a few sprigs of oregano
  • 3 sage leaves
  • a few sprigs of rosemary
  • a few thyme leaves
  • one small spring onion - white part only
  • 400 g spelt flour - can be part white spelt, part wholemeal spelt, or all white or all wholemeal...
  • 1 tsp salt
  • 2 tsp dried yeast
  • 30 g olive oil
  • 270 g warm water

Instructions

  • Add garlic, spring onion and fresh herbs to mixer bowl.
  • Chop 3 sec/speed 9/MC on.
  • Scrape bowl out and set aside.
  • Add remaining ingredients in the following order: water, yeast, olive oil, flour and salt.
  • Knead 2 min/kneading function/MC on. In the last 10 seconds, add ¾ of the garlic/herb mix.
  • Remove to a large floured or oiled bowl and cover with a cloth in a warm spot for an hour or until it has doubled in size.
  • Preheat your oven to 200°C or 400°F.
  • Knock your dough back, pour it on to a baking tray lined with baking paper and shape. It will be sticky/runny - this is good!
  • Sprinkle with salt, reserved herbs/garlic and a little extra olive oil.
  • Do a second rise for 20 min, uncovered.
  • Bake in the oven until done - about 25-30 min checking at 20 min.
  • Let it rest for 10 min before serving.

Notes

You can omit the herb/garlic stage for a plain focaccia 🙂

    So delicious and loved by the whole family for Christmas. I substituted bread flour for the spelt flour and did some artwork on top with cherry tomatoes, herbs and red onion

  2. Just wondering if this will work with standard flour (not even baking flour)? I wasn’t able to get spelt /baking flour at the supermarket today. Than guy

  3. Absolutely delicious. I used bakers flour, 1/2 a teaspoon of each herb and grated tasty cheese on top. Definitely recommend making it 👌

  4. Omg. This is BEYOND delicious! My kids (aged 6 and 4) inhaled it. I may have to make another for my husband because I doubt there will be any left by the time he gets home. I didn’t have fresh herbs on hand (except for parsley) so I used 1/2 tsp of dried herbs for each of them. Perfect.

  7. I made this for Christmas day brekky and my whole family (from oldies to littlies) was begging for more. It was inhaled within minutes and I regretted not making 2. And I’ve got some fussy eaters on my hands too. Delicious recipe!

  8. I made this tonight to stretch a pastameal that would just had been a bit to little for my family of 4. It was so yummy! Supereasy to make and a great big tick of approval from mr2 who usually is very fussy with food

  9. This is delicious! I won’t tell you how much we just ate… bread is always better eaten warm right? I also grated a little parmesan cheese over the top before putting it in the oven.

  10. I made this last night and it was AMAZING! I’ve made spelt bread before but it has never been as light and fluffy as this. Divine!

  11. Can you update “interval speed” to be knock off friendly, please? Eg my Bellini has 10 speeds and the first 3 can be intermittent for harder materials, thanks!
