How to Spatchcock a Chicken for The Perfect Roast Chicken:
- Place your whole chicken breast side down.
- Using sharp kitchen shears remove the neck, back bone and parsons nose by cutting down either side of the spine.
- Take a sharp knife and make a cut through the cartridge at the top of the inside breastbone to make breaking the breastbone easier.
- Flip the chicken over and press down firmly, with the palm of your hand between the breasts to flatten it out.
- Tuck your wings under the breastbone, and turn the legs inside out.
- Now you have a perfect spatchcock chicken.
