With Easter around the corner we thought that a Skinnymixers Hot Cross Bun recipe was a perfect way to celebrate.
With less sugar than most recipes and the ease of using the Thermomix to make the perfect dough – there is no better way to celebrate than these iconic treats.
I am also proud to say that unlike the store bought options, the Gluten Free version will not leave you feeling like you’re missing out!
Feel free to get experimental with your ingredients – you can use chocolate chips, sultanas, dried apricots or mixed fruit with peel instead of currants.

What to make with stale Hot Cross Buns?
For a number of years now my Hot Cross Bun Bread and Butter Pudding has always been incredibly popular at Easter time.
Homemade bread doesn’t stay fresh very longer as it is missing the preservatives, so if you happen to have some stale buns to use – this recipe is highly recommended.
I can neither confirm or deny that we made extra Hot Cross Buns so I could make this for the kids (me)!
Gluten-free Hot Cross Buns Thermomix Recipe
Every Easter the Skinnymixers Facebook Group has soooo many requests for a gluten-free Hot Cross Buns recipe, that we thought it was time to finally make one!
I hope you can forgive me but after a long day in the kitchen baking, I forgot the X on these buns.
Even without the cross, they are still delicious and definitely not hard like rocks.
The trick is to use Gluten-free Bread Mix Flour that contains egg and not plain gluten-free flour.
The egg in the Simply Wize Gluten Free Bread Flour mix helps it stay nice and fluffy.
We used Simply Wize from Coles or Woolworths, the Laucke and Aldi Bread Mix is also good.
You do need a little more water though, check out the recipe variation in the notes section. If your dough is still a bit crumbly, try adding water 10 g at a time.
If your machine is struggling to knead the GF dough, remove and knead by hand.
skinnymixer's Hot Cross Buns Thermomix Recipe (Gluten-free)
Equipment
- 1 pastry brush
Ingredients
Dough
- 160 g water - (extra 20g for GF Simply Wize - if using other GF mixes start with 20 g less and keep adding in 20 g increments until sticky dough forms)
- 3 tsp dry yeast
- 40 g coconut sugar or caster sugar
- 250 g Bakers flour - or GF Bread Mix Flour - we used Simply Wize as it contains egg
- 1 tsp bread improver (optional) - GF if required
- ½ tsp salt
- 1 tsp coconut oil - or vegetable oil
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
- ¼ tsp ground ginger
- 80 g currants - or choc chips /alternative dried fruit
For the Cross
- 60 g plain flour - gluten-free if required
- 70 g water
Glaze
- 50 g sugar
- 70 g water
Instructions
- Add water, yeast and sugar to mixer bowl. Heat for 2 min/37℃/speed 1/MC on.
- Add remaining dough ingredients in order except for the currants. Mix for 5 sec/speed 4/MC on. Then knead for 2 min. (Gluten-free - if your machine is struggling to knead, remove and knead by hand)
- Add currants and mix for 10 sec/reverse/speed 4/MC on.
- Place dough in a lightly greased thermoserver or bowl cover with a lid or cling wrap. Leave in dry, warm place to rise for about 30 min or until doubled in size.
- Once dough has risen, knock down dough and form 6 balls and place in a baking paper lined metal tray.
- Cover with a tea towel and leave in a warm dry spot to rise again for 30 min or until doubled in size.
- While your dough is rising, preheat fan-forced oven to 200℃ and make your cross mixture. Without washing the bowl, add cross ingredients and mix 20 sec/speed 4/MC on. Add the mix to a sauce bottle or piping bag.
- When buns have finished rising, add your cross to then buns and bake for 15 min.
- While your buns are baking, make your glaze in a clean mixer bowl. Add all glaze ingredients to mixer bowl and mix for 3 min/100℃/speed 3/MC on.
- When your buns are baked remove from oven and glaze immediately with a pastry brush.
- Serve warm with our Whipped Maple Butter.
