The Skinnymixers Community seems to have Dumpling Lasagna on the brain, as it was one of the most-requested People’s Choice recipes behind Sticky Sweet & Sour Pork and Rainbow Beef Stir Fry for Dinners 4 – out April 10th 2026!

It didn’t make it into the cookbook as we already had a Mexican Lasagna Stack and a Lazy Chicken Lasagna included in the 36 NEW Dinners recipes

Well it seems our incredible Mez Nelson couldn’t stop thinking about a Dumpling Lasagna either, so she whipped some up one night for her family and decided to share the recipe. 

This isn’t your typical lasagna! You may have seen the concept on Tiktok or Instagram. Basically it is deconstructed dumplings, layered like a lasagna. You top with some spring onions, dumpling sauce and chilli crisp oil for a delicious easy dinner.

Does it take a little effort to make the layers and then steam? Yes. But nowhere near the amount of effort it takes to fold 40 dumplings!

Gluten-free Dumpling Wrappers

If you are looking for gluten-free dumpling wrappers, you can make them using Mez’s guest recipe or you can use rice paper sheets which are a slightly different texture but still delicious!

It is nearly impossible to purchase gluten-free dumpling wrappers commercially. This recipe works really well with a good quality gluten-free flour than has xanthan gum in it. We used Orgran Plain Flour.

How To Cook

  1. First we make the dumpling filling mixture
  2. Layer dumpling filling into ramekins with a little liquid stock and dumpling wrappers.
  3. Use whatever size ramekins that you have, although it is best to fit the dumpling wrapper to the size of the ramekin. If all of the ramekins don’t fit in the varoma steaming trays, you can also boil water in a pot and prop the ramekin on top of some lids, then cover and steam. 
  4. If you have leftover filling and wrappers, you can make dumplings or you can make meatballs out of the filling.

Mez's Dumpling Lasagna

Equipment

  • 6 Ramekins to fit in steaming trays, size of dumpling wrappers

Ingredients

Filling

  • 4 cloves garlic
  • 10 g fresh ginger
  • 150 g wombok cabbage - roughly chopped
  • 80 g carrot - roughly chopped
  • 30 g shallots - roughly chopped
  • 60 g spring onion - white part, roughly chopped
  • 100 g brown mushrooms - halved
  • 500 g chicken or pork mince
  • ¼–½ tsp white pepper
  • 2 tsp onion powder
  • 1 tsp garlic powder
  • 1 Tbsp oyster sauce
  • 2 Tbsp soy sauce - tamari or coconut aminos
  • 1 Tbsp sesame oil
  • 2 tsp sugar of choice

Lasagna

  • 200 ml water mixed with 2 tsp chicken stock to make liquid stock
  • 30 Dumpling wrappers

Choice of toppings

  • Finely chopped spring onion - green part
  • Dumpling dipping sauce
  • Chilli crunch
  • Fresh coriander

Instructions

Thermo cooker

  • Add garlic, ginger, cabbage, carrot, shallots and spring onion to mixer bowl. Chop for 5 sec/speed 6/MC on. Scrape down and repeat until no large chunks remain.
  • Transfer vegetable mix into a nut milk bag (or clean tea towel) and squeeze out excess liquid set aside.
  • Add mushrooms to mixer bowl. Chop for 5 sec/speed 5/MC on, scrape and repeat if needed.
  • Add reserved veg and remaining filling ingredients. Mix for 10 sec/speed 3/MC on. Mix further using a spatula if needed. Set aside.
  • Without washing the bowl, add 1000 g water to mixer bowl. Cook for 10 min/steaming temp/speed 4.
  • While heating, assemble lasagna. Add 1.5-2 Tbsp liquid stock to base of ramekin same size as dumpling wrapper
  • Place a dumpling wrapper in the ramekin, spread 1–2 Tbsp filling over wrapper and repeat layers to the top. Finish with a wrapper layer
  • Spoon over another 1–2 Tbsp liquid stock
  • Place ramekins into steaming trays. Cook 18- 20 min/steaming temp/speed 4.
  • Serve topped with your choice of toppings.

Notes

Gluten-free: Use rice paper sheets briefly dipped in water or our Gluten-free dumpling wrappers.
Low Carb: Replace dumpling wrappers with blanched cabbage leaves.
Vegetarian: Replace mince with tofu and use Vegetarian oyster sauce.
