What is Thai Mango Sticky Rice?
This light, refreshing traditional Southeast Asian dessert is made with sticky glutinous rice served with mango and a delightful coconut drizzle sauce. This one is Mez’s favourite and I don’t think she would ever forgive me if we did SkinnyAsia without it!!
This gluten-free treat is incredibly easy to make at home. It is essential to soak the glutinous rice overnight though and can’t just be cooked in a rice cooker.
The end result is a healthy dessert, that is perfectly acceptable for breakfast. This particular recipe is not a rice pudding and is the perfect combination of salty sweet.

Although this dessert shines with mango, our testing team also loved pan-fried banana and fresh pineapple.

For Best Results
Once you have cooked the sticky rice, try to keep it warm to be able to serve up easily – this is especially important for presentation of the dish. As the rice cools it will be become difficult to work with. You can add a couple of drops of water and reheat if needed.
