The skinnymixer’s Chunky Bolognese has been a popular recipe on the Thermomix Recipe Community for a few years now, and has some fantastic 5 star reviews. Recently I asked the community who felt like they were not using their Thermomix or Bellini as much as they thought they should be, nearly 3,000 people responded…

and so I launched a new initiative called Simple Meal Sunday, to inspire and encourage people to use their machines more. This spaghetti recipe is fantastic because its simple, healthy and budget friendly. It can also be reinvented into so many different kinds of meals, from Chilli Con Carne (using my Mexican Spice Mix), to Shepherds Pie (using my Silky Sweet Potato Mash) to name a few.

I have included both the low calorie/quick version which is HCG compliant and a version using fresh ingredients.

Ingredients

  • 1 tsp onion powder - or 1 medium brown onion, peeled and halved.
  • 1 tsp garlic powder - or 1 garlic clove peeled
  • 20 g olive oil - omit for quick version
  • 700 g tomato sugo/passata - from the supermarket
  • 50 g tomato paste
  • 30 g water
  • 20 g worcestershire sauce - optional, omit for p2
  • 1 tbsp stock concentrate
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/8 tsp cinnamon
  • 1/2 tsp dried chilli flakes - (optional)
  • pinch cracked black pepper
  • 700 g beef mince

Instructions

Quick & Low Calorie Bolognese

  • Add all ingredients to the mixer bowl, except for the mince.
  • Insert your simmering basket into the bowl and put your beef mince inside. Cook for 15 min/steaming temp/speed 4/MC on.
  • Carefully break up the mince with a spatula, cook for a further 15-20 min/steaming temp/speed 4/MC on. or until cooked.
  • Put your cooked mince into a serving bowl and pour your sauce over before serving.

Fresh Ingredient Bolognese

  • Add your onion and garlic to the mixer bowl, chop for 3 sec/speed 9/MC on. Scrape bowl down.
  • Add olive oil to mixer bowl and cook for 5 min/100°C or 212°F/speed 2/MC off.
  • Add remaining ingredients to the mixer bowl, except for the mince.
  • Insert your simmering basket into the bowl and put your beef mince inside. Cook for 15 min/steaming temp/speed 4/MC on.
  • Carefully break up the mince with a spatula, cook for a further 15-20 min/steaming temp/speed 4/MC on or until cooked.
  • Put your cooked mince into a serving bowl and pour your sauce over before serving.

Notes

This makes a large serve of bolognese, which will comfortably serve 6.
Smaller serve: You can halve this recipe by halving all of the ingredients and reducing the cooking time by about 3 minutes.
You can use chicken, pork or lamb mince as well.
Bellini Users
Quick & Low Calorie Bolognese
Use blunt blade for this recipe.
At step 2 & step 3 use speed 3.
If using a Supercook, use 120°C or 250°F at step 4 & 5.
Fresh Ingredient Bolognese
Use blunt blade for this recipe.
At step 2 increase cooking time if needed.
At step 4 & 5 use speed 3.
If using a Supercook, use 120°C or 250°F at step 4 & 5.

  1. My family love this spag bol sauce. It does make a good amount and I will often have the leftovers for my lunch the next day if it hasn’t all been gobbled up by Hubby or Miss 13. I often omit pasta and cook zoodles in the veroma for the last 10 min of the cooking time.

  2. I wasn’t keen in using my thermomix for mince but OMG we all love this. It’s the only meal my kids will eat in 10mins flat. It is now on our weekly list

  4. I was a little disappointed in this after reading so many positive reviews. I must admit that I forgot to add the stock paste so perhaps this is why I found it a little bland. I don’t really think you can beat a slow cooked spaghetti Bol sauce on the stove top. Sorry, I really wanted to like.

  5. This was super easy but it was absolutely horrible, I can think of many things that taste nicer including but not limited to chicken flavored 2 min noodles. Plane pasta with wollies homebrand tomato sauce. A week old cold maccas cheeseburger and uncooked Brusselsprots. All I can hope for now is that by the time i wake up in the morning the taste of that will be finally gone.

  6. I made this for the first time tonight. Everyone loved it as much as my usual spag Bol. But oh so much easier for me. I didn’t have to stand over the stove. I was able to sweep & wash the kitchen floor while dinner cooked. Thanks great recipe. 😊

    I make it wth chicken mince & blitz zucchini & carrot as well to make it a even more nutritious meal

  8. I would love to try this as a shepherd’s pie as you suggest in the intro. Other than making this and then the silky sweet potato mash and placing one on top of the other, what is the recommended time in the oven to brown the top etc as I assume it won’t need additional cooking????

  9. I just made this for the 2nd?, maybe 3rd, time. I love it just as much as the 1st time. I’ll be cooking all my mince dishes this way from now on.

  12. Oh my goodness! This is AMAZING BOLOGNESE! I’ve tried a few BOLOGNESE recipes and was totally disappointed by the lack of flavour! Tried this one and BAM! Everyone loved this recipe. Miss 13 has requested less chilli next time – and I’ll add more veggies and some canned lentils! Perfect Friday night tea!

  13. Wow!!.. the last spag bog that i made in my bellini was ok to taste but the texture was just……YUK…

    This was something awesome… I overdid it on the chilli so miss 11 thought it was a bit spicy… I just told her it had no chilli and she was happy and ate it anyway.. lol..

  14. I was a bit hesitant to make this dish as I read chunky bolognaise as lumpy mince.
    I decided to push through my skepticism and try it anyway.

    I had some nice grass fed beef mince so I reduced the amount of meat to 500g but added some Swiss brown mushrooms, dice capsicum and zuchinni to the sauce to bulk it up.

    I used to think I made a good bolognaise but I hang my head in shame at what I Had thought was good..

    This was spectacular – truly!

    I hate having leftovers – too much good food in this world to eat the same thing two nights in a row, but I ate this two nights in a row.

    This will be how I always prepare my bolognaise from now on.

  15. This tastes so indulgent but is full of good ingredients! Live that I can make it without having to have fresh ingredients on hand, making it super easy even if I haven’t done any shopping. This is definitely my new go-to bolognese recipe!

  17. Yum! Finally a TMX bolognese that is close to how I cook it on the stovetop. This was so delicious and easy. I added in some veggies as well and it was a hit! No crumbly mince and lovely and rich.

  18. Wow! I am so impressed with this bolognaise. It was rich and full of flavour. I served it with zucchini noodles for me and on a bed of mashed potato for my daughter. I’ve made a different version of bolognaise for years (not in the Thermie) and always enjoyed it but this one is on a whole different level. This is going to be a regular on our menu from now on.

  20. I made this as I’m P2 HCG and craving some comfort food. I had given up any mince dishes in my thermomix because I didn’t like the texture but the steam basket for the mince was fantastic and because I am moving house this week not having the mess of bolognese sauce splattering on the stove and splash back was awesome. Can’t wait to try this with the Worcestershire and cheese!
