Chicken Chasseur, or “Hunter’s Chicken”, is one of those recipes that tells a story. The word Chasseur comes from the French word for hunter. Traditionally, the dish was whipped up with wild game and mushrooms foraged after a day out in the forest. I’m a big fan of mushroom foraging myself (there’s something so satisfying about finding the perfect porcini), so this dish holds a special place in my heart.

- slow cooker or TM6/TM7 slow cook mode
Ingredients
- 1 clove garlic
- 30 g olive oil
- 100 g shallots (small brown) - halved
- 200 g button mushrooms - or brown mushrooms, halved
- 1 tsp fresh thyme leaves
- 100 g dry white wine - or verjuice
- 30 g Chicken Stock Concentrate
- 100 g tomato paste
- 1 pinch cracked black pepper
- 800-1000 g chicken thigh
- 150 g water
- 2 Tbsp cornflour - mixed with 2 Tbsp water
To Serve
- salt - to taste
- fresh thyme leaves
Instructions
Thermo cooker + Slow Cooker - omit water
- Add garlic into mixer bowl and chop 3 sec/speed 7/MC on.
- Add oil, shallots, mushrooms and thyme. Cook 5 min/100°C or 212°F/reverse/speed 1/MC off.
- Add wine and cook for 2 min/100°C or 212°F/reverse/speed 1/MC off.
- Add stock concentrate, tomato paste, pepper and stir to combine with spatula.
- Add chicken and contents from mixer bowl to slow cooker. Cook on low for 4-5 hr.
- With 30 min to go, stir in cornflour mixture. Season to taste before serving.
TM6/TM7 Slow Cook Mode - reduce chicken to 800g
- Add garlic to mixer bowl and chop 3 sec/speed 7/MC on.
- Add oil, shallots, mushrooms and thyme. Cook 5 min/100°C or 212°F/reverse/speed 1/MC off.
- Add wine and cook for 2 min/100°C or 212°F/reverse/speed 1/MC off.
- Add stock concentrate, tomato paste, pepper, chicken and water. Stir to combine with spatula, then start Slow Cook /90 mins/90°C or 195°F/MC on.
- Add cornflour mixture and cook 3 min/100°C or 212°F/reverse/speed 1/MC on.
- Season with salt and garnish with extra thyme to serve.
Conventional
- Mince garlic.
- Sauté oil, garlic, shallots, mushrooms and thyme in a pan on medium-high heat for 5 min.
- Add wine, stock concentrate, tomato paste and pepper. Cook for 2 min.
- Transfer to slow cooker with chicken. Cook on low for 4-5 hr.
- With 30 min to go, stir in cornflour mixture. Season to taste before serving.
