One of my favourite hobbies is wild mushroom foraging, and I absolutely adore the story behind the recipe for Chicken Chasseur and where its namesake originated: the word Chasseur comes from the French word for hunter—and the pairing of wild game meat with the mushrooms they would collect on their return home from their hunt.
I love the simplicity of the ingredients in this Chicken Chasseur Thermomix recipe and the minimal steps / cooking time. Although you wouldn’t think it when reading the ingredients, the sauce has a beautiful complex flavour.
Personally I like to serve this with my favourite Silky Sweet Potato Mash recipe & steamed greens, but I know some have childhood memories of it being served with pasta or rice.

Tips & Dietary Needs

Low Carb – Replace cornflour mixture with 1 tsp xanthan gum.

Super Skinny – Omit shallots, garlic, oil and opt for chicken breast over thigh. Skip Step 1 and Step 2. In Step 3 add thyme, 2 tsp onion powder and 1 tsp garlic powder.

Paleo – Replace wine with water and replace cornflour with 1 tsp xanthan gum.

Go vegetarian – Replace chicken with 300 g or 10.6 oz zucchini, cubed medium. In Step 4 add 400 g or 14.1 oz tinned chickpeas, drained and rinsed. Use vegetable stock concentrate.

Fridge: store in an airtight container in the fridge for up to 3 days (make a double batch—this one tastes even better the next day as the sauce thickens and deepens in flavour!).

Freezer: freeze cooked portions for up to 3 months.

Freezer Dump Bag (Uncooked): store your uncooked dump bag in the freezer for up to 3-6 months. Thaw completely in the fridge before cooking.
