Healthy Carbonara from The Healthy Mix

Healthy Carbonara

Chances are there are very few people who don’t enjoy a really well made carbonara recipe… but there are plenty of people like me, who unfortunately for various reasons, can’t indulge in it as often as they may like!

This carbonara recipe is the star of ‘The Healthy Mix’ for me, because it really captures the essence of a good carbonara without the guilt, carbs and bloating. What I love about this Thermomix recipe is that it also makes enough for two separate meals so you can also use it to make a healthy Lasagne.

  1. What an amazingly tasty and very very easy recipe!!!! Served with the 2 yolks, mushrooms and bacon, and my parents and kids said it tasted amazing. I sold it as creamy pasta, not carbonara.
Will definitely be adding this to the list and will be making it again. Thank you!

  2. I made this for the first time when guests unexpectedly dropped in for dinner and it was a hit. We all thought it was so easy and delicious! The texture is surprisingly creamy and soft – just like a carbonara – but as some have noted, the flavour is not what you might expect if making it for the first time. I’m OK with that though because I love cauliflower soup! I think you really need to add in the bacon and mushroom (which I did) in order to make the dish work as a carbonara. As someone who is lactose, gluten and egg free – I’m a real fan of this one.

  3. I fed this to my 18 year old brother who is THE fussiest eatter! He had nooooo idea it was cauliflower and he still thinks he’s never eaten cauliflower hehehe

  4. I don’t think this tastes like traditional carbonara but it’s absolutely delicious! I made the version with the eggs. I have an adult cauliflower hater in my family and he ate it all up and complimented the dish! I have also used the sauce in lasanga which is really good too.

  5. I used the carbonara sauce as a cob loaf dip today. Added some spinach and bacon and it was amazing!!! Such a good sauce with so many uses 😊

  6. OMG… I was dubious.. But made it for hubby daughters mates & younger kids ALL loved it & it served all 6 of us with some sauce leftover, which I had on brown rice!! DEVINE

  7. Though the recipe is good, it doesn’t taste at all like the traditional carbonara that skinnymixers has made it out to be. Tasty and easy, but keep in mind that it does taste different

    1. Thanks for your feedback,
If you decide to cook the recipe again have a go at the LCHF variation in the book. The addition of the egg adds an additional level of creaminess & richness to the dish, which is closer to the original but a few extra calories 🙂

  8. It doesn’t taste like the real creamy calorie-laden carbonara sauce BUT it sure tastes good! It definitely satisfies my cravings for a creamy sauce without having to worry about ruining my diet. Best of all, it means getting in more veggies and that’s always a good thing. Love your recipes. This latest book is definitely worth it’s weight in gold.

  9. Made this sauce tonight adding chicken peas and carrot and a small teaspoon of babas and made into into pies. Yummmm 🙂

  10. Like all skinny mixers recipes, this one is stellar. It’s incredibly versatile and the sauce can be used for pasta /zoodles or in a potato bake. Looveeee it!

  11. Where has this been all my life! It’s so delicious and, as someone who counts calories, it’s guilt free when you have it with zoodles. Thanks Nik.

  12. This sauce is so delicious! I was apprehensive at the small ingredient list but it was so so tasty! I can’t wait to make lasagna with the leftovers and another favourite, chunky bolegnase. Thanks Nik.

  13. Made this last night – absolutely amazing. Served with zoodles. Will be a regular in our house. Thanks Nikki for another healthy awesome recipe.

  14. Delicious meal! Hubby was super impressed it was made with “those ingredients??!!”
Definitely going to be a regular at my house!!

  15. This recipe is unreal!! Everything I have cooked from THM so far has been delicious but the book is 100% worth it for this recipe alone. Amazing!!

  16. I made this the other night and it was sensational! It doesn’t taste like cauliflower and even on zoodles it tastes like a naughty indulgence.

Do yourself a favour and if you haven’t bought the cookbook do!

  17. I made this tonight with 2 versions. I cooked pasta for the “boys” and zoodles for the “girls” I divided the sauce between the 2 & tried both. Both are absolute winners. Thanks for yet another awesome recipe.
