This is a tasty, comforting, easy to make dish with the yummiest roast vegetables that bake in a velvety rich sauce. The secret ingredient that truly makes it such a winning dish is the Chicken Stock Concentrate, so if you haven’t given it a go before you now have the best excuse.
For Best Results:
We recommend using a metal baking dish with enough surface area to allow the vegetables to spread out. Enamel baking dishes and ovenproof sauté pans or skillets also work.
If you don’t have a suitable metal based dish, you can use oven proof glass, pyrex or ceramic dishes. In testing we found that they took longer to cook, we recommend preheating and cooking until the vegetables are tender/sauce reduced to thicken. It could be an extra 10-30 min depending on your dish and oven.
We do not recommend using the disposable aluminum trays, as they don’t seem to retain the heat enough for the vegetables to cook.
