Healthy Lemon Tart

Every year the community cries out for healthy Thermomix recipes to use up excess lemons, and every year I think I should really do Lemon Tarts.

Lemon Tarts are one of my favourite desserts, as I am not overly fond of really sweet desserts and I love the tang of citrus. Of course, like most things delicious in the world, they are traditionally a ‘treat’ food—until now!

  • blanched almond meal
  • coconut oil
  • honey or preferred sweetener
  • 4 eggs
  • 2 lemons

Notes

This recipe has Low Carb, Super Skinny, Nut Free and Low Fodmap variations. We have also provided instructions to make a large tart instead of 6 small tarts.
Blanched Almond Meal is the almond meal without the skins. If you are buying almond meal it will be blanched almond meal.
Bellini Users:
In Step 4, keep cooking the curd until it is thickened - this may take an additional 5 min. For Intellis cook speed 3 and Supercooks speed 4.

    As I was preparing this for my dinner guests it occurred to me “I hope this doesn’t turn out tasting like lemsip!” Thankfully is was totally amazing! So easy and with all the lemon trees in the backyard I know it will be a regular for us! Thank you!

  3. Made one large of this lemon tart to take to a friends place today , I doubled the filling to make it a large but didn’t need to double the base. It cut into 16 but there was a choice of dessert , it would cut into 12 nice size pieces if it was the only dessert. It is very easy and very light, very lemony. I decorated it with thin slices of lemon cut with a slice of fresh raspberries on top of that. It was great for the gluten free and also had a guest that normally only has fruit for dessert but had it has it had no refined sugar in it and they loved it too. Will be making this again.

  4. I’ve made this recipe three times now and only as a large tart (I STILL haven’t gone to purchase mini tart tins) and it’s been a hit every time!! Kids have it for dessert and hubby and I have it for a treat later on while watching telly. We absolutely love it!!! Loving the different variations out there now too. Thanks Nic!

  6. These are perfection! I did one large tart and doubled the lemon filling (including one lime as didn’t have quite enough lemons) and it was so beautifully light and tart. The crust is amazing! Super easy and quick – I am hopeless with pastry dough so this suited me perfectly. I decided last minute we needed a dessert for our impromptu dinner party and it is a great option to whip up and throw in the fridge until ready to serve. Rave reviews all round!

  8. Wow what can i say! Where was this recipe 3 yrs ago when pregnant with my 3rd and craved nothing but lemons, this was a huge hit in my house. I used almond meal instead of almonds tho ( same same i guess) and it was my 1st ever tarts.. Will be a regular in this house. And i love that they are Freezer Friendly woohoo.

Its also really fun to be that smug host who gives the leftover lemon filling to guests when they leave, after raving about how amazing I am to have just whipped that up in less than half an hour!   11. Made a large tart instead of small ones and doubled th filling. Amazing. Really difficult to stop at one slice.
