The Chorizo & Potato Stew is a hearty family favourite that will fill bellies right up! This is a fantastic choice for a mid-week meal that you can bulk up by steaming additional vegetables during the cooking phase for a complete meal. I have learned that the majority of commercially made chorizo mince is full of additives and preservatives as it is a raw meat product. I therefore love how making chorizo mince from scratch is not only incredibly easy but so flavourful and healthy for you and your loved ones.

First dish I’ve made from ALTOS and WOW! My 7 year old picked it out and we all loved it. My new favourite skinnymixers meal! I added peas and zucchini to the steaming basket and didn’t bother with any sides. I also browned the meatballs off a little bit before adding to the basket. This will be a regular at our house, the flavours are incredible. Fed my family of three with two serves left for husbands lunches. Thanks Nik!!
First recipe cooked from A Little Taste of Spain and it didn’t disappoint. I had extra mouths to feed and there was plenty to go around. Served straight up without any sides and it was still filling. The visiting 3 yr olds scoffed it down with lots of mmmmmm noises. It’s kind of like the Smokey baked beans but yummier meat. A great meal for any time of the day.
I made this last night and it was absolutely delicious!! My husband loved it and kept going back for seconds and thirds. the stew tasted amazing on its own and then the chorizo meatballs just added an even deeper layer of flavor! Sure to be a staple in my house 🙂
