Our new cookbook The Healthy Mix Dinners 2 is full of warming, Slow Cooker friendly recipes perfect for a low effort slow cooked dinner this Winter.
All these recipes are exclusive to the cookbook, however we thought we would make an easy reference guide for everyone who has the book. The following recipes either have Slow Cooker variations written under the recipe in the cookbook or are slow cooker recipes.
Asian Chicken Noodle Soup
This recipe has a slow cooker variation in the cookbook – all instructions are in the cookbook under the recipe.
You double the recipe and use a whole chicken (although not absolutely necessary). Using a whole chicken means you get the added flavour and nutrients from slow cooking the chicken bones.
Add everything into the slow cooker except the carrot, bok choy and noodles.
Cook on low for 6-8 hr and then add vegetables with 30 min to go.
Serve with the noodles, or add into the broth at the end to cook if you like.
Bulgogi Beef
This is a traditional Korean dish with a Skinnymixers spin! With a yummy combination of sweet, savoury, and tangy flavours.
The regular recipe in the cookbook is a quick cook stir fry, with tips on how to velvet cheaper cuts of meat and keep the meat tender.
There is a slow cooker variation in the cookbook under the recipe, that uses cubed chuck beef or other slow cooker cuts.
Do not use the velveting technique for the slow cooker method, instead we cook low and slow to achieve melt-in-the-mouth tender beef.
Creamy French Pork
This is a delicious French-inspired dish that cooks quickly but has an elevated, luxurious flavour like you are dining in a restaurant.
The regular recipe in the cookbook is a quick cook, with tips on how to velvet cheaper cuts of pork and keep the meat tender.
There is a slow cooker variation in the cookbook under the recipe, that uses cubed pork shoulder.
Do not use the velveting technique for the slow cooker method, instead we cook low and slow to achieve melt-in-the-mouth tender pork.
Chicken Tortilla Soup
This recipe has a slow cooker variation in the cookbook – all instructions are in the cookbook under the recipe.
You use a whole chicken breast.
Add everything into the slow cooker after sautéing except for the toppings.
Cook on low for 2-3 hr and shred chicken using 2 forks.
You can increase quantities but just make sure the chicken is cooked through.
Freezer Friendly: If freezing, add the toppings fresh.
Mango Chicken Curry
This recipe has a slow cooker variation in the cookbook – all instructions are in the cookbook under the recipe.
It makes a fair bit of sauce and you can increase the chicken in the slow cooker to 1 kg. Although you may need to season to taste when adding extra protein or vegetables to the recipe.
Make the sauce only and add to the slow cooker with chicken thigh. Cook on low for 2-4 hr or until cooked.
Lamb Saag
This recipe has a slow cooker variation in the cookbook – all instructions are in the cookbook under the recipe.
You can double the whole recipe if you like or increase the meat – although you might need to season to taste.
After slow cooking on low for 6-8 hr, we stir through the spinach mixture with 30 min to go.
White Chicken Chili
This recipe has a slow cooker variation in the cookbook – all instructions are in the cookbook under the recipe.
You use a whole chicken thighs.
Add everything into the slow cooker after sautéing except for the cornflour mixture.
Cook on low for 2-3 hr and shred chicken using 2 forks.
You can increase quantities but just make sure the chicken is cooked through.
Corned Beef Dinner with Horseradish Cream
This recipe is an actual slow cooker recipe in the cookbook.
We found slow cooking the seasoned silverside in the braising liquid with the vegetables, produced the most flavourful and tender result for the corned beef.
Perfect to start cooking earlier in the day and having dinner ready on the table in the evening.
