 Thermomix Coconut Curried Sausages
My Coconut Curried Sausages Adapted For Thermomix

Coconut Curried Sausages is the first Thermomix recipe I ever “developed”.

Now, I had never heard of curried sausages in my life… so I jumped on Google and browsed about 100 recipes.

With this concept in my head that it would be creamy and coconutty… only to find it was more of a tomatoey dish with supermarket curry powder in it. PASS!!!!

This Thermomix recipe is really delicious, but more of a comfort meal in the Skinnymixer household.

I converted it to Thermomix a few years ago and whenever someone asks for a curried sausages recipe, I find the original version raved about. Usually we do it with frozen peas, but I didn’t have any on hand so chucked in some baby spinach – which we actually now prefer.

The Coconut Curried Sausages recipe has been a firm favourite in the Skinnymixers Facebook Group & Thermomix Community for a number of years and features in The Top 12 Thermomix Recipes to Freeze List which is full of some of my other healthy Thermomix recipes.

Total Time: 45 minutes

Calories: 511kcal

Ingredients

  • 1 small brown onion - peeled, halved
  • 30 g butter or oil
  • 1 kg thin beef sausages - we use gluten free or grain free when available
  • 300 g basmati rice - use half for tray bake version
  • 1-2 Tbsp babas meat curry powder
  • 2 Tbsp stock concentrate + 850 g | 30 oz water - or 850 g | 30 oz liquid stock instead
  • 60 g tomato paste
  • 400 ml tin coconut cream
  • 200 g frozen peas or baby spinach

Instructions

Thermomix Method

  • Place sausages on deep steaming tray, in a layered up ladder style to allow for air flow.
how to ladder sausages for thermomix
  • Weigh rice into the simmering basket and rinse well.
  • Put the onion into the mixer bowl, chop for 2 sec/speed 6/MC on. Scrape bowl down.
  • Add butter and cook for 5 min/100°C or 212°F/speed 1/MC off
  • Add curry powder and cook for 1 min/100°C or 212°F/speed 1/MC off
  • Add water, stock concentrate and tomato paste to bowl. Put simmering basket with rice in place. Put the steaming tray in place. Cook for 20 min/steaming temperature/speed 4.
Periodically stir rice up with spatula while cooking.
  • Remove sausages. Remove rice to a thermo server to keep warm. ** do not drain liquid, keep it in bowl**
  • At this point you can choose to peel the sausages and then slice them as preferred.
  • Insert butterfly, add sausages coconut cream and peas to bowl. Cook for 8 min/100°C or 212°F/reverse/slowest speed.

Tray Bake Method

  • Preheat fan forced oven to 180°C
  • For the tray bake method we halve the rice to 150 g & use coconut milk.
  • Add sliced onion (fry onion if you prefer), tomato paste, curry powder and coconut milk to large deep ovenproof metal pan mix to combine. Once combined add in the stock concentrate and water and stir through.
  •  Add in pre-rinsed rice to the sauce in the pan. Then evenly place sausages in the pan.
  • Transfer the pan to the oven on the top rack and cook for 30-40 mins. If your dish is not metal it will take longer.
  • Add in peas into the pan in the last five minutes of the cook time.

Notes

You can omit the rice for grain free, and add extra veg to the steaming trays if you desire... just use only 500 g or 17.6 oz water.
The quality of the sausages have a big impact on this dish, you can substitute chicken breast or chicken thigh utilising the same cooking instructions. It is also popular with chicken sausages or sausages cooked on the BBQ instead of steamed.
The sauce is a runny sauce which is soaked up by the rice for extra flavour.
You can find the curry powder at Asian and Indian grocers or online at Grandma's Pantry.
If you don't have Babas, please be mindful of how strong your curry powder is if you need the dish mild. Babas is quite mild so if using Keens you may not want 1-2 Tbsp. Check out http://skinnymixers.com.au/ingredients/

Use the blunt blade for this recipe.
At step 4 you may need to increase the onion cooking time.
At step 6 if using an Intelli place a tea towel over the steamer lid, use speed 3 and increase cooking time if required. If using a Supercook please use speed 4.
At step 9 DO NOT use your butterfly and be sure to use speed 1.

Coconut Curried Sausages Thermomix Recipe

  1. Ill be making these tonight.. thankyou so much for the bellini instructions 😊 really helpful.. will be cooking rice seperate so I can add the extra veggies wish me luck

  2. I hate curried sausages with a passion.. Cooked this though tonight as I work my way through the blog.. I thought I would have to have a sandwich.. Turns out I am taking the leftovers for lunch tomorrow’!

    They are good!

  3. This is absolutely fabulous. So quick to cook & the kids love it, my neighbour loved it – 11/10 and my mum loves it too! Will definitely be making this again! Such a large amount of food too so quickly!

    Thanks Nik! x

  4. That sauce is gorgeous! My 18 month old literally licked her plate clean and then came crawling across the table wanting to know if she could lick mine too (sadly for her I wasn’t inclined to share!). Thanks for a delicious and quick mid-week meal!

  5. This was delicious! Halved the whole recipe except for the rice (I used 1 cup) and it still worked perfectly. However, I cooked my sausages in a frying pan as I prefer that over steaming/peeling. I also only had coconut milk (I think the recipe has been changed since I went shopping for ingredients, lol) and it worked fine.

Next time I would make the full amount of sauce and rice, but still only use 500g of sausages to make four or five full meals.

    Thanks for a great recipe!

  6. Oh my gosh. Yum. I misread the instructions and had to remove rice and strain off the coconut milk. Lol. And it was still delicious. I wonder if the sausages would successfully go in the basket once the rice is out. To ensure sausage integrity. But all in all. WOW. we will definitely make again.

  7. The most delicious Sausage curry recipe ever. My hubby is not a fan of sausages – beyond the realms of a sneaky one at Bunnings- and licks the plate clean every time. I will never eat them raw again 😆

  8. I shudder whenever my husband requests curried sausages for dinner as i personally hate them! So i generally make a second dinner for myself.. however i stumbled across this recipe and thought to give it a go. They were DELICIOUS! So tasty and i think now this will be a regular for dinner for EVERYONE in our household… thank you for a great recipe!

  9. Yep made again tonight and it was a huge success again! But I make it with coconut cream and the sauce is nice and thick 🙂 thanks Nic another winner!!

  10. Made this for the first time this week & had to use chicken sausages as our supermarket didn’t have any beef ones, tasted great, love how the sauce cooks all through the rice. Will try a different brand of coconut milk next time too to see if sauce turns out thicker. Keep up the great work Nik

  11. This recipe is a favourite in our household. First skinnymixer recipe I ever made. So budget friendly and feeds a lot of people!

  12. So delicious. I saw the post come up on Facebook the other day and I had some sausages in the fridge and was determined to make it the next night. Unfortunately I wasn’t able to get to the Asian grocer to get Babas, however I used Keens and it still tasted great to me! Can’t wait to try it again with the proper curry next time!
