My Coconut Curried Sausages Adapted For Thermomix

Coconut Curried Sausages is the first Thermomix recipe I ever “developed”.

Now, I had never heard of curried sausages in my life… so I jumped on Google and browsed about 100 recipes.

With this concept in my head that it would be creamy and coconutty… only to find it was more of a tomatoey dish with supermarket curry powder in it. PASS!!!!

This Thermomix recipe is really delicious, but more of a comfort meal in the Skinnymixer household. 

I converted it to Thermomix a few years ago and whenever someone asks for a curried sausages recipe, I find the original version raved about. Usually we do it with frozen peas, but I didn’t have any on hand so chucked in some baby spinach – which we actually now prefer.

Ingredients

  • 1 small brown onion - peeled, halved
  • 30 g butter or oil
  • 1 kg thin beef sausages - we use gluten free or grain free when available
  • 300 g basmati rice - use half for tray bake version
  • 1-2 Tbsp babas meat curry powder
  • 2 Tbsp stock concentrate + 850 g | 30 oz water - or 850 g | 30 oz liquid stock instead
  • 60 g tomato paste
  • 400 ml tin coconut cream
  • 200 g frozen peas or baby spinach

Instructions

Thermomix Method

  • Place sausages on deep steaming tray, in a layered up ladder style to allow for air flow.

  • Weigh rice into the simmering basket and rinse well.
  • Put the onion into the mixer bowl, chop for 2 sec/speed 6/MC on. Scrape bowl down.
  • Add butter and cook for 5 min/100°C or 212°F/speed 1/MC off
  • Add curry powder and cook for 1 min/100°C or 212°F/speed 1/MC off
  • Add water, stock concentrate and tomato paste to bowl. Put simmering basket with rice in place. Put the steaming tray in place. Cook for 20 min/steaming temperature/speed 4.
    Periodically stir rice up with spatula while cooking.
  • Remove sausages. Remove rice to a thermo server to keep warm. ** do not drain liquid, keep it in bowl**
  • At this point you can choose to peel the sausages and then slice them as preferred.
  • Insert butterfly, add sausages coconut cream and peas to bowl. Cook for 8 min/100°C or 212°F/reverse/slowest speed.

Tray Bake Method

  • Preheat fan forced oven to 180°C
  • For the tray bake method we halve the rice to 150 g & use coconut milk.
  • Add sliced onion (fry onion if you prefer), tomato paste, curry powder and coconut milk to large deep ovenproof metal pan mix to combine. Once combined add in the stock concentrate and water and stir through.
  •  Add in pre-rinsed rice to the sauce in the pan. Then evenly place sausages in the pan.
  • Transfer the pan to the oven on the top rack and cook for 30-40 mins. If your dish is not metal it will take longer.
  • Add in peas into the pan in the last five minutes of the cook time.

Notes

You can omit the rice for grain free, and add extra veg to the steaming trays if you desire... just use only 500 g or 17.6 oz water.
The quality of the sausages have a big impact on this dish, you can substitute chicken breast or chicken thigh utilising the same cooking instructions. It is also popular with chicken sausages or sausages cooked on the BBQ instead of steamed.
The sauce is a runny sauce which is soaked up by the rice for extra flavour.
You can find the curry powder at Asian and Indian grocers or online at Grandma's Pantry.
If you don't have Babas, please be mindful of how strong your curry powder is if you need the dish mild. Babas is quite mild so if using Keens you may not want 1-2 Tbsp. Check out http://skinnymixers.com.au/ingredients/
Bellini Users
Use the blunt blade for this recipe.
At step 4 you may need to increase the onion cooking time.
At step 6 if using an Intelli place a tea towel over the steamer lid, use speed 3 and increase cooking time if required. If using a Supercook please use speed 4.
At step 9 DO NOT use your butterfly and be sure to use speed 1.

  1. I live in a household of 2 people, I’m a vego and my daughter hates sausages. So I made the sauce in thermy as per recipe, then just fried vego sausages in one fry pan and normal sausages in another, then chopped the sausages and poured the sauce over the top. It was such a tasty dish, my daughter even ate it and loved it. The recipe made heaps, so I have frozen the extra for nights when I’m at work, it’s defrosted beautifully..

  3. I love that we can now enjoy Curried Sausages that aren’t high fat. We use to do them with Keens Powder and Cream. Now thanks to Nik my household is enjoy full flavour, but healthy recipes.
    So bloody yum minus the peas… much nicer with baby spinach. Peas didnt do it for me at all

  4. A very tasty simple dinner. I have made it with fresh sausages as well as with leftover BBQ sausages. Both worked great. Very popular. I always have leftover curry flavoured rice and we make a beautiful fried rice from this. So good too.

  5. Second time I have made this and I have to say we love it!! It’s nothing like the curried sausages we all know. My partner usually hates dishes like this but it’s now one of his favorites! I use both spinach and peas and it gives it the freshness curried suausages need, I also only use the one tablespoon of curry powder, it’s plenty for the kids and still a lovely flavor ! It’s even better the next day 😀

  10. My husband was super opposed to this for dinner when I told him it was what I was planning – how wrong he was. Delicious and not greasy at all (which is my lasting memory from childhood curried sausages). I halved the rice and still found it more than enough and it was even better on toast for breakfast.

  12. This is a great version of curried sausages, I have made it with the peas and also with the spinach leaves. Both ways are yummy.

  13. Like most Aussie kids I grew up with curried sausages as a weekly meal… Hated it! So I was very sceptical about trying this. Lo and behold it was beeyootifull! I replace the rice with quinoa, as I had run out of rice, and I suspect this is the only reason why my curry and rice loving 2.5 year old didn’t eat it, but my partner and I both loved it. Do yourself a favour all you curry snag haters out there, and give it a whirl!

  14. So I just cooked, ate and EJOYED Niks curried sausages! That is amazing considering the minute I left home at 16, I vowed to never ever eat curried sausages again due to the fact that we were fed them as kids and they were AWFUL. All you curried sausage hating people better give these a try before you write off all curried sausages.

    I used regular cream not coconut cream due to the fact that coconut cream/milk is the devils blood.

  17. Really beautiful flavours in this easy to prep meal, and I love that the majority of ingredients are ones that I have sitting at home anyway. Another plus is that you have a good chunk of time whilst the sausages are cooking away to clean up the kitchen, organise kids etc- another winner in my books and a fave for the hubster!
