 Thermomix Coconut Curried Sausages
My Coconut Curried Sausages Adapted For Thermomix

Coconut Curried Sausages is the first Thermomix recipe I ever “developed”.

Now, I had never heard of curried sausages in my life… so I jumped on Google and browsed about 100 recipes.

With this concept in my head that it would be creamy and coconutty… only to find it was more of a tomatoey dish with supermarket curry powder in it. PASS!!!!

This Thermomix recipe is really delicious, but more of a comfort meal in the Skinnymixer household.

I converted it to Thermomix a few years ago and whenever someone asks for a curried sausages recipe, I find the original version raved about. Usually we do it with frozen peas, but I didn’t have any on hand so chucked in some baby spinach – which we actually now prefer.

The Coconut Curried Sausages recipe has been a firm favourite in the Skinnymixers Facebook Group & Thermomix Community for a number of years and features in The Top 12 Thermomix Recipes to Freeze List which is full of some of my other healthy Thermomix recipes.

Calories: 511kcal

Ingredients

  • 1 small brown onion - peeled, halved
  • 30 g butter or oil
  • 1 kg thin beef sausages - we use gluten free or grain free when available
  • 300 g basmati rice - use half for tray bake version
  • 1-2 Tbsp babas meat curry powder
  • 2 Tbsp stock concentrate + 850 g | 30 oz water - or 850 g | 30 oz liquid stock instead
  • 60 g tomato paste
  • 400 ml tin coconut cream
  • 200 g frozen peas or baby spinach

Instructions

Thermomix Method

  • Place sausages on deep steaming tray, in a layered up ladder style to allow for air flow.
how to ladder sausages for thermomix
  • Weigh rice into the simmering basket and rinse well.
  • Put the onion into the mixer bowl, chop for 2 sec/speed 6/MC on. Scrape bowl down.
  • Add butter and cook for 5 min/100°C or 212°F/speed 1/MC off
  • Add curry powder and cook for 1 min/100°C or 212°F/speed 1/MC off
  • Add water, stock concentrate and tomato paste to bowl. Put simmering basket with rice in place. Put the steaming tray in place. Cook for 20 min/steaming temperature/speed 4.
Periodically stir rice up with spatula while cooking.
  • Remove sausages. Remove rice to a thermo server to keep warm. ** do not drain liquid, keep it in bowl**
  • At this point you can choose to peel the sausages and then slice them as preferred.
  • Insert butterfly, add sausages coconut cream and peas to bowl. Cook for 8 min/100°C or 212°F/reverse/slowest speed.

Tray Bake Method

  • Preheat fan forced oven to 180°C
  • For the tray bake method we halve the rice to 150 g & use coconut milk.
  • Add sliced onion (fry onion if you prefer), tomato paste, curry powder and coconut milk to large deep ovenproof metal pan mix to combine. Once combined add in the stock concentrate and water and stir through.
  •  Add in pre-rinsed rice to the sauce in the pan. Then evenly place sausages in the pan.
  • Transfer the pan to the oven on the top rack and cook for 30-40 mins. If your dish is not metal it will take longer.
  • Add in peas into the pan in the last five minutes of the cook time.

Notes

You can omit the rice for grain free, and add extra veg to the steaming trays if you desire... just use only 500 g or 17.6 oz water.
The quality of the sausages have a big impact on this dish, you can substitute chicken breast or chicken thigh utilising the same cooking instructions. It is also popular with chicken sausages or sausages cooked on the BBQ instead of steamed.
The sauce is a runny sauce which is soaked up by the rice for extra flavour.
You can find the curry powder at Asian and Indian grocers or online at Grandma's Pantry.
If you don't have Babas, please be mindful of how strong your curry powder is if you need the dish mild. Babas is quite mild so if using Keens you may not want 1-2 Tbsp. Check out http://skinnymixers.com.au/ingredients/

Use the blunt blade for this recipe.
At step 4 you may need to increase the onion cooking time.
At step 6 if using an Intelli place a tea towel over the steamer lid, use speed 3 and increase cooking time if required. If using a Supercook please use speed 4.
At step 9 DO NOT use your butterfly and be sure to use speed 1.

Coconut Curried Sausages Thermomix Recipe

  1. Another big thumbs up👍🏻I made a pretty good curried sausages in my past life. This will now be my go to. Thanks Nik x

  2. This was Ah-mazing!!!! Curried sausages is an old favourite and this surpasses the bottled stuff I used to make pre thermomix. Just loving cooking now I have my thermie. This made plenty but I had about 1.2kg of sausages. Wasn’t sure how I’d go with the coconut sauce as I’m not a huge fan but it was perfect!! Will become a regular meal!!

  3. I made this tonight. Used pork sausages and added carrot, potato and beans instead of peas or spinach. Think I might be the only one that says I needed more sauce. Just enough to serve 5 but none now for any left. Next time I will add more water. But everyone loved it. Just waiting for the last kid to get home from footy training for his imput although 5/6 means it will get cooked again. Thanks for the recipe xx

  4. Wowser! I used one of the microwaveable brown rice packets .. I also did not read the recipe notes until too late .. So the runny sauce was, well, runny! And lots if it 🙂 absolutely Delish, now going to be one regular dish as it gives us dinner and a couple more for the freezer 🙂 have to be happy with that!! And notes to self .. A lot less water required if you’re not doing rice .. Congrats Nik, you’ve done it again.

  5. So good!! I swapped the rice for 600g sweet potato and cooked as per recipe. Once done I put the sweet potato back into the bowl and finished as per sweet potato mash recipe

  6. I make these with Kanga Bangas (Kangaroo sausages), to increase the iron, and decrease the calories (Kangaroo is a very lean meat). I make this every week, because the whole family (including a three and one year old) love it! Thanks for a fantastic healthy meal the whole family can enjoy 😉

    1. I’m so glad to hear the Kanga Bangas went well! I have them in the fridge and have wondered if they’ll work! Going to make with cauli rice 🙂

  7. Made this this other night and it was lovely! I subbed in chicken instead. It made enough for me to have meals prepped in the freezer 🙂

  8. Made this tonight with chicken instead of sausages. Absolutely delicious! This will become a staple. Thanks again Nik 🙂

  9. Curried sausages is an easy and delicious meal. I’ve cooked it several times now and I still enjoy it. This time I added potatos to the steaming tray then added them to the bowl with the sausages. Towards the end I then added some zucchini for some green. I didn’t have any peas or spinach. Then once finished I added coriander to the rice and curried sausages. Thanks for another great recipe.

  10. Definitely think the sausages make all the difference. I used cheap ones and they really let the dish down. Will try with better quality ones (or perhaps chicken!) next time. The sauce itself was incredible so I just ate around the meat 😉 Kids loved it regardless!

  11. Another great recipe.
Fussy hubby had seconds, and thirds!
Loved the flavor will try it with chicken next time.
    Thanks Nik! 🙂

  12. This was so good, my husband turned his nose up when I told him what we were having. He soon changed his mind once he tasted it.

  13. Nik your recipes are amazing. They are fast becoming regulars in our house with both books purchased & awaiting the next! This recipe is devine & my toughest critics aged 3 & 1 devour it, along with my husband & I.

  14. making these again tonight made for night shift staff last month loved them making for other half tonight should be another hit with him

  15. We all LOVED these. and i totally despise snags but i love this recipe so much i make enough to freeze as well, its that d’lish 🙂 my kids even love it and they pick like birds .

  16. First time I have made this and my family of five were well fed, with two dishes to freeze for later! Kids licked their plates and hubby actually liked a curry! Thanks skinny mixers! Will be a regular in our house form now on 🙂

  17. Delicious, best curry sausages I have made. Even my 20month old loves them and is a fussy eater. Thanks Nik!

  18. Thanks Nic for another great family recipe , changed sausages for chicken and was still really yummy. My very fussy 8yr old even went back for seconds.
