Skinnymixer’s Secret Surprise Mango Pancakes is a healthy version of everyone’s favourite yum cha dessert, you can find the recipe in the cookbook SkinnyAsia.
If you have ever been to yum cha, I’m sure you have tried the delicious Mango Pancakes filled with cream and mango.
My kids will absolutely eat the entire batch of these Secret Surprise Mango Pancakes if I let them – they aren’t a very sweet dessert, so if you prefer a sweeter whipped vanilla cream please feel free to increase the sugar.
But they had no idea there was a secret surprise vegetable hidden in the batter!
The batter for the pancakes are coloured with cooked pumpkin (like the Pumpkin Waffles in The Healthy Mix VI). This not only helps add extra fibre but adds additional nutrition to the pancakes.
Although these are traditionally known as a dessert, this Skinnymixer’s version in SkinnyAsia is perfectly acceptable for breakfast, lunch or even for snacks!
What you will need:
- Mango! Fresh is always best but only when it is mango season. I still enjoy these mango pancakes with preserved mango. You could even make a strawberry version.
- Cream – choose a cream that is thick and good for whipping. For our dairy free community there have been some amazing non-coconut dairy-free whipping cream options available at the supermarket lately!
- Flour – this recipe uses plain flour (gluten-free if required)
