Tiropita Greek Cheese Pie

Sharing is caring!

My mum Patricia Arharidis & I have managed to convert her famous Tiropita (Greek Cheese Pie) recipe for the new Skinnymixers cookbook SkinnyEntertaining

So many Greeks have “their way” of making pita, but this recipe is how my late Yiayia taught my mum to make it, and how my mum taught us girls to make it and now how I will teach all of you how to make it! We just call it Pita in my family.

How to Roll Tiropita Dough:

So many people wanted this recipe in ‘A Little Taste of Greece’ but there was no way I was going to be able to fit it in such a small book. I’m not sure if it’s a “getting older” thing, but the desire to immortalise our family recipes is an overwhelming feeling lately.

Feeling particularly nostalgic today, covered in flour with the smell of cheese baking in the oven 🥰  this recipe is only available in the cookbook.
For the first time ever, we have included Thermomix instructions and also conventional instructions – so you no longer need a Thermomix in order to cook the recipes.

One of my favourite foods… my mum’s Tiropita. This shows the layers as you bite into the flaky goodness.
  1. Roll / stretch pastry out as thinly as you can. It is best paper thin! Then cover with melted butter mixture and cut wedges into it – these are what we fold into the centre.
Stretch out pastry as thin as you can, cover in the melted butter mixture and cut wedges into it. These are what you fold back into the middle to create the pastry layers.
