Mediterranean-inspired green vegetables with garlic, lemon, and olive oil — light, vibrant, and the perfect side for just about anything. Most importantly, I strongly encourage you to use whatever green vegetables are in season.

What vegetables do I mean when I say “in season”?

Have I studied what vegetables are in season and when? Absolutely not!

But I will 100% be buying whatever vegetables are on special at the local fruit and vegetable shop or supermarket or in abundance at the local fruit markets.  So if you see some zucchinis, broccoli or green beans on special – grab some and create your own ‘Seasonal Greens’ combo. 

This recipe was developed to be an easy, go-to recipe for you to add some flavour to a simple side dish.

You never know, the kids might actually eat all their vegetables with no complaints! 

What to serve it with?

  • The Perfect Steak 
  • grilled fish or chicken – no real need to get fancy! 
  • Steak au Poivre (Pepper Steak in the SkinnyMediterranean Book)

  • broccolini (or quick cooking green vegetables of choice!)
  • butter or olive oil
  • Chicken Stock Concentrate
  • cornflour mixed with 1 Tbsp water
  • cracked black pepper
  • garlic
  • lemon peeled in strips
  • onion powder
  • sugar snap peas or green beans
  • water
  • zucchini

Can I use any type of greens?
Yes. This recipe works with whatever is in season – silverbeet, spinach, kale, or even broccoli rabe. Just adjust cooking times depending on the thickness of the stems.

How do I stop the greens from going soggy?
Don’t overcook them. Cook until just tender, feel free to adjust the timing to suit the greens used.

Can I make this dish ahead of time?
Seasonal Greens are best served fresh, but you can use in meal prep or reheat. They just won’t be as crisp.

What goes well with Seasonal Greens?
They pair beautifully with grilled fish, chicken, or lamb, or anytime you want to add some vegetables on the side.
