This is a great healthy Thermomix recipe to turn the brussels sprout into something that even the most green hating person will love – because bacon makes everything better!

Ingredients

  • 250 g bacon - roughly cut into large chunks
  • 500 g brussels sprouts - ends removed and halved
  • 1 / 3 cup of olive oil
  • pinch of salt

Instructions

  • Set your frying pan to medium-high heat.
  • Add 250 g or 8.8 oz bacon to mixer bowl, chop for 20 sec/speed 4/MC on. Scrape the bowl out into the frying pan and let the bacon dry-fry while you prepare the sprouts.
  • Without washing the bowl, put 500 g or 17.6 oz sprouts into the mixer bowl and chop for 20 sec/speed 6/MC on. Scrape the bowl out into the frying pan with the bacon.
  • Add 1/2 of the olive oil to the frying pan and occasionally move it around. Let the mixture cook for around 10 mins, or until charred, adding more olive oil as needed. Sprinkle with a pinch of salt and serve.

Notes

This dish is a fantastic one to prepare while grilling meat or steaming chicken.
Its also delicious with eggs in the morning for breakfast.

  1. I made 5kg of these over the Christmas holiday! I added pine nuts and when I ran out of bacon I used Christmas ham! I made it fir 2 groups. Firstly for my work colleagues who were so disappointed at first, that I had brought yuck Brussels to share for our Christmas lunch…. Well, they changed their minds pretty quick and promptly complained that I had only brought a kilo! Secondly for family, I had both sides over for lunch and it all disappeared. My mum went to buy more sprouts and pine nuts on Boxing Day as a hint!

  3. I realised I did not have enough brussel sprouts so substituted with asparagus, ended up about a 50/50 ratio. Tastes delicious! Can’t wait to try it with an egg too.

  4. I made this and served it to my adult daughters who have never been a fan of brussel sprouts (I did tell them it was cabbage & bacon to get them to eat it)…..Yep you guessed it both loved it and are now making it on a regular basis, even the grandchildren like it!!

  13. Made this last night, it didn’t make it onto my plate. I ate it straight out of the pan. Yum. I used butter instead of oil. Just because everything tastes better with butter. I have been making this with cabbage for years, don’t know why I never thought of Brussel sprouts. Thanks Nik.

  16. Chop 1/2 brown onion with bacon and cook together as for bacon. Follow recipe and the add pine nuts or slivered almonds at end.
