Ingredients

Wet Paste:-

  • 3 tbsp ground coriander
  • 1 tsp ground cumin
  • 1-7 small red dried chillis - adjust based on spice preference, I used 3
  • 1.5 tsp dried turmeric
  • 3 cloves garlic - peeled
  • 3 tsp onion powder
  • 2 tbsp Malaysian Meat Curry Powder - see Notes

Curry:-

  • 40 g olive oil
  • 1 star anise
  • 1 cinnamon stick
  • 400 ml coconut milk
  • 50 g water
  • 500 g chicken breast - *large* chunks
  • 500 g sweet potato - peeled, medium dice
  • 1 tbsp salt
  • 1 tsp coconut sugar - or brown sugar/rapadura/white sugar

Instructions

  • Blend the wet paste ingredients; work your way up to 1 min/speed 9/MC on.
  • Scrape mixer bowl down.
  • Add 80 g or 2.8 oz of coconut milk, olive oil, star anise and cinnamon stick.
  • Cook 3 min/100°C or 212°F/speed soft/reverse/MC on.
  • Add chicken pieces, sweet potato, remaining coconut milk, water, salt and sugar.
  • Cook 18 min/100°C or 212°F/speed soft/reverse/MC off.
  • Let curry stand for 5 min before serving with rice or use cauli rice for a paleo version!

Notes

The curry powder that I like to use is called ‘meat curry powder’ by Babas. You can find it in most good Asian/Indian grocers:-

Use blunt blade for this recipe.
At step 4 use speed 1
At step 6 use speed 1 and increase cooking time if sweet potato isn't tender at the end of this step.

  1. Another delicious recipe. I don’t use chilli in anything because my girls don’t like too much spice, but my husband and I loved this one.

  2. I served this yesterday for our dinner party. It went along with cauli-rice, basmati rice and loads of veggies (butternut pumpkin, broccoli, carrots and spinach). I had expected left-overs, but no chance! The bowl was clinically clean afterwards.
    This was the first curry I had prepared from the scratch, but definitely not my last. Very delicious recipe, thank you, Nik!

  3. This was a lovely meal. I also added pumpkin and it was absolutely delicious. The small child ate everything in her plate, which is unusual, unless it’s a plate full of salmon haha thanks again Nik for a great recipe

  4. This is my favourite curry – its so quick and delicious. I use 1.5 tsp of salt as I found 1 tablespoon too salty and I use chili flakes as I can’t find the whole dried chilis.

  5. Another easy quick flavoursome meal. I seem to have curries all the time in my freezer these days along with your soup and mac.

  6. This curry is beautiful! I left out the dried chillies completely to make it kid friendly and it was still full of flavour. A staple in our house 👌

  7. I made this for the first time today but I wasn’t paying attention and added the wrong amount of cumin ( too much by double ). I proceeded anyway wondering how bad it could be but the end result was pretty average ( totally my fault ).
    I hate wasting food though so I strained out the cooked chicken and sweet potato then made an extra batch of the sauce minus the cumin and added the two sauces back together (in a pot) plus some yellow lentils, fresh coriander root chopped and capsicum as I now had a double batch. The end result AMAZING!!! I’m sure it was closer to how it was meant to be.
    Nikalene is a genius!
    I have loved every single recipe of hers I have tried as has my 2 year old.

  8. This was delicious and great because I always have these ingredients on hand. My kids said this was “scrumptious”. Another one to add to my go to recipes list. Hmmmmm which recipe to try next! Almost every one is a winner in this house!

  12. This was delicious and well worth the time spent hunting down the babas curry powder. It’s nearly as good as my nans Malaysian curry that is made with alagappas curry powder. Super tasty and really quick to cook. This will be a weekly staple!!!!!!

  13. Love love love!! My kids ate it all even my fussy 8yr old. I used the curry powder I had in my pantry and added 2 small potatoes along with the sweet potato total to 500grams combine! Will defiantly be making again!!

  14. I made this with curry powder I had in my pantry instead of the one Nik stated, and it was still delicious. I tripled the meat and vegs (using other root veg as well as sweet potatoes) and did it on the stove. It will be a regular in our house. 🙂

  15. So easy to make and absolutely delicious! I used less chili so it was child friendly but it was a massive hit and went great with cauliflower rice!
