These choc chip oat bars are a great snack for lunchboxes and are a breeze to make in the Thermomix or Bimby.

I use the Silicone Mini Loaf Pan from The Mix Shop Australia to make all my back-to-school snacks.

I use the Enjoy Life Foods choc chips because they are dairy free, but more importantly they are made in a dedicated nut and gluten-free facility – which is an awesome choice for people who have coeliacs or anaphalaxis.

You could easily adjust the ingredients in these to make different flavours, for example cinnamon and dried apple. I purposefully made these dairy free, which does change the texture of the bars compared to traditional ones – but feel free to add in butter if you wish. I hope you love them!

Ingredients

  • 300 g whole rolled oats
  • 100 g coconut sugar - or sugar of choice
  • 60 g milk of choice - i used coconut
  • 3 whole eggs
  • 150 g chocolate chips

Instructions

  • Preheat oven to 190°C or 375°F, and lightly grease + line a medium sized slice tray.
  • Add oats to mixer bowl, chop for 3 sec/speed 5/MC on.
  • Add remaining ingredients, excluding the chocolate chips, and mix for 10 sec/speed 3/MC on.
  • Add chocolate chips and mix for 5 sec/speed 3/MC on.
  • Press mixture into prepared tin and bake in the oven for 15 mins or until golden brown. Allow to cool before cutting.

Notes

Keep in the fridge in an airtight container.
Freezes and defrosts well.

  1. We weren’t a big fan of these. I used Rapadura sugar thought which I think might have something to do with it. I will try them again with a different sugar and maybe some honey or dates mixed in

  3. A hit with the kids as per the recipe. Sweeter than things I normally cook for them, I’d reduce the sugar next time. I liked the look of it and as I am grain free I made a paleo version- used mostly roast almonds, also sunflower seeds, dedicated coconut and chia seeds up to the weight of the oats in the recipe, eliminated the sugar completely and used less of the enjoy life choc chips. Otherwise same eggs/coconut milk. Yum! Thank you!

  4. Every time I’ve tried to make a “muesli bar” in the past, my children have always turned up their noses.
    Not sure if it’s just that this one is amazing (I think so!) or the fact that I haven’t given them store bought bars for the school holidays so they’ve forgotten the taste, but they are loving this recipe! They really enjoyed wrapping them in baking paper and tying string around them so they cant start taking them to school from tomorrow as well.

  6. After the 1st batch was devoured in 1 afternoon, I had to make more the next day. Only thing I was short on was Choc Chips, so I topped up with White Chocolate Melts….OMG, added a whole new dimension of flavour! The family have asked me to always add milk and white chocolate from now on lol

  7. I made these for the kids lunchbox and truthfully I didn’t think they would like them but they were gone when I inspected their lunch boxes at the end of the day, I was stoked as I think there a fab nourishing snack, I also used dark chocolate X

  8. Love this recipe, have 2 very fussy 9yr olds and they love it. My 2yr old also had some, wasn’t too fussed as he didn’t come back for more – haha. Made it in a lamington tray so turned out like a pancake, going to make again tomorrow in a smaller tray so they end up thicker & going to try without sugar but add dates instead. Very easy and delicious!

  10. These are fantastic! Made them today but only had 200g oats so I subbed in sunflower seeds, Chia seed and sesame seeds to make up the rest and they turned out wonderfully!

  11. Sorry Nik, wasn’t a fan. Looking at the photo I expected it to have a bit of crunch. It resembled a stiff baked porriage. I even cooked it longer as it looked soggy in the middle after 15 mins and took a while to go golden on top in a 190c fan forced oven.

  12. My kids love these these. We had to make them without the chocolate as we are not allowed it at school so replaced it with sultanas. These will be on constant rotation i think. Hubby also liked them but has asked for a drizzle of honey on top prior to baking.

    I used Natvia instead of sugar, chia seed “eggs” & soy milk (because of my allergies), and used craisins and white chocolate bits.
    Turned out great!

    1. Hi – what white choc chips did you use? You say you used soy milk due to allergies, so wondered if you used dairy free choc chips???

  15. these look delicious! Alas, oats are not gluten free ( even if labelled as such from overseas. No gf labelled products from Australia can contain oats.) People with coeliac disease should not eat them unless they have been tested and found to have no reaction to oats.

    1. I read it that the choc bits used were made in a gluten free facility – for future reference. Not that this recipe was gluten free. ??

    2. Oats don’t actually any gluten but due to processing then become contaminated. There are a few brands that are made in a factory that is dedicated to gluten free oats. I can’t remember the brand right now but they are out there 🙂

  16. I am thinking of trying to make these added sugar free by exchanging the sugar with a banana…what do you all thilnk…will,it work?

    1. I think you might need to lower the egg as often egg free people use 1 banana as egg replacement too. Good luck

    2. I baked this today and used Natvia to replace the sugar. A banana might make the recipe more gooey, which could affect how it turns out.. I’m thinking about not including any sugar at all next time. The chocolate could be enough sweetener, unless you were making this for children that might be a bit picky. You could replace the eggs with banana (sweet and binding all in one), and not add any sugar. I kinda want to do this now!

    1. I just cut mine up, wrap them individually and put them in a container in the freezer. They instantly unfreeze when you get them out so you can eat them straight away.
