Since we announced that the next book was going to be ‘A Little Taste of Mexico’, the Skinnymixers Facebook Group has made it abundantly clear they really want a ‘healthy churros’ recipe.

I have thought long and hard, and ordered many different churros while eating out, just to be sure that I knew what they taste like. I believe I have come up with a healthy alternative to thermomix churros, which according to my scales are definitely NOT healthy!

You can sprinkle this crumb on yoghurt, icecream, custard, flan, creamed rice, porridge, chia pudding AND most importantly the super delicious (and still top secret) dessert recipe featured in A Little Taste of Mexico!

We ate Churros all over Mexico, and one of my most beautiful memories of our travels was a spanish-only speaking lady offering me half of her Churros to try at a very regional Cantina. It was amazing! Unfortunately, I couldn’t justify putting a traditional Churros recipe in the book, but this substitute crumb captures the flavour and texture of a freshly fried Churros in regional Mexico.

Ingredients

  • 200 g raw macadamia nuts
  • 2 tbsp coconut sugar - or sugar of choice, brown would be my next choice
  • 1 tsp cinnamon powder
  • 2 pinches of vanilla bean powder
  • 1 pinch of salt

Instructions

  • Preheat oven to 160°C or 270°F and put all of your ingredients into a roasting dish, combining well with a spoon.
  • Roast nuts for 8-10 min or until just golden brown, you dont want them to start to burn.
  • Allow nuts to cool compeletely before putting in your mixer bowl and chopping for 1-2 sec/speed 6/MC on. If you want a 'chunkier' consistency, use speed 5.

Notes

Store in an airtight container in the cupboard or fridge.

Use your sharp blade for this recipe.
At step 3 add on extra chopping time until you get your desired crumb consistency.

    How do I give 6584 stars? Because if I could, I would. I am slightly (insanely) addicted to this recipe. I love this on yoghurt, ice cream, fruit, cheesecake, pancakes and also just on a spoon. It’s also yum as a kind of crumble on muffins! I am still genuinely shocked at how much it actually tastes like Churros, without the guilt!   2. Hi, I made this with the Gelatina de Leche for Fathers’ Day last year (about 3 months ago), and it was delicious! Just wondering, does anyone know how long the Churros Crumb will keep in a container in the pantry? Is it still ok to have now, or should I make a new batch? It never went in the fridge. Thanks!

  3. This has quickly become my standby dessert. Added to some roasted stone fruit, a drizzle of balsamic vinegar and a dollop of yoghurt., it adds that little crunchy element I was missing.
    And saves on washing up because the plates were licked clean.

  4. This is the bomb! Can’t believe how good it takes, I reckon its better than a churros. So easy to make and pairs perfectly with the Gelatina de Leche. Its so hard not to eat it on its own by the spoonful.

  5. This is really delicious and makes heaps. I have been eating ovet lactose free yogurt and its perfect.
    Nice but itselt by the spoonful too!

  7. Very yummy creation! I poached some pears with your chai mix and coconut and served with some vanilla bean yoghurt and this churros crumb. Would also be delicious on nice cream, yoghurt, stewed apples, creamy desserts and sprinkled on porridge. Makes quiet a bit so lots of opportunities to try it on different things 🙂

  9. Delicious! Has put a new tasty spin on the ever popular custard my boys always request. I roasted for 8 minutes but next time I will roast closer to 10.
