Ingredients

  • 200 g raw cashew nuts
  • 100 g desiccated coconut - plus extra for rolling
  • 50 g coconut oil
  • 50 g organic maple syrup
  • 2 tsp vanilla bean paste - or extract
  • 100 g dark chocolate - roughly chopped

Instructions

  • Add all ingredients, except chocolate, to mixer bowl and blend for 15 sec/speed 8/MC on.
  • Use spatula to redistribute ingredients, and blend for another 15 sec/speed 8/MC on.
  • With damp hands, roll walnut sized balls. Tip: squeeze the mixture initially to compress, then roll. Ensure hands are kept damp. If your hands are hot, they will go oily but this will not impact the final product.
  • Put balls in the freezer for 20 min.
  • After 20 min, add dark chocolate to mixer bowl, mill for 10 sec/speed 9/MC on. Scrape bowl down. Melt for 3 min/50°C or 120°F/speed 2/MC on.
  • Pour chocolate into a bowl and extra desiccated coconut into a second bowl.
  • Coat the frozen bliss balls in chocolate, and then coconut one at a time.
  • Refrigerate for 30 min or until needed.

Notes

To make these into a quick slice, simply press into a slice tin and coat with chocolate then coconut.

  3. These are a lovely, easy to make & delicious sweet snack that is not full of nasty preservatives. I would definitely make these again.

  4. Yum! I’m using these as fat bombs. Used macadamias as didn’t have cashews. Made 30 small balls, some coated in choc and coconut, some in choc and sprinkles (for the little man), some plain (to reduce the carbs).

  11. These are awesome. So hard to roll but so worth it! Maybe my hands are too hot and my chocolate melted funny but I got there in the end! So delicious. I added some almonds too because I didn’t have enough cashews.

  12. Just put a batch in the freezer, went to get the chocolate out of the cupboard and it’s all gone. I have white chocolate and cacao powder, think it will work with a tbs of that mixed in? Maybe with a little coconut oil to thin it down?

  13. Finally had to give these a go after reading all the positive comments on Skinnymixers, and I am glad I did, as they are absolutely delicious. I have already eaten 4 so I hope there will be enough left by the time my family get home tonight!
