Ingredients

  • 200 g raw cashew nuts
  • 100 g desiccated coconut - plus extra for rolling
  • 50 g coconut oil
  • 50 g organic maple syrup
  • 2 tsp vanilla bean paste - or extract
  • 100 g dark chocolate - roughly chopped

Instructions

  • Add all ingredients, except chocolate, to mixer bowl and blend for 15 sec/speed 8/MC on.
  • Use spatula to redistribute ingredients, and blend for another 15 sec/speed 8/MC on.
  • With damp hands, roll walnut sized balls. Tip: squeeze the mixture initially to compress, then roll. Ensure hands are kept damp. If your hands are hot, they will go oily but this will not impact the final product.
  • Put balls in the freezer for 20 min.
  • After 20 min, add dark chocolate to mixer bowl, mill for 10 sec/speed 9/MC on. Scrape bowl down. Melt for 3 min/50°C or 120°F/speed 2/MC on.
  • Pour chocolate into a bowl and extra desiccated coconut into a second bowl.
  • Coat the frozen bliss balls in chocolate, and then coconut one at a time.
  • Refrigerate for 30 min or until needed.

Notes

To make these into a quick slice, simply press into a slice tin and coat with chocolate then coconut.

  5. I often find this kind of thing not worth the effort it takes to roll and end up only eversking them once… Not these! They are a regular rotation through our freezer for a healthy treat that feels naughty!!

  6. Just made these and they are awesome. Very easy. I’d heard they can be difficult to roll, but it was a cooler night, so no issues. I added extra 40g of Lindt 70% – so think I was a bit generous on the chocolate dipping. Now I just need to hide them! Also great as now I can take treats for vegan friends at work.

  7. Fantastic recipe! I made exactly as per recipe and had no trouble rolling into balls. My coconut oil was quite solid though so that might have helped.

  8. Soo delicious. I made it as a slice, i doubled the filling recipe to fill a regular sized slice tin, and the suggested quantity of chocolate to just provide a thin layer over the top. I added just a touch of coconut oil to the chocolate so it would spread easier and set nice and smooth. I found i only needed half the amount of maple syrup, but that is obviously personal preference. It was all gone within 48 hours with just my hubby and me ?

  14. These are so quick and easy. They taste amazing and so easy to add in other flavors for variations . We love them with coconut oil choc on the outside. Our favorite is adding cherries (from a jar) to make cherry ripe balls. So yummy and not naughty!

    1. Oooh, I love that idea.. I really wasn’t excited about coating them all individually in chocolate.. and I used 90% dark chocolate that I really don’t like so every few minutes I’d accidentally lick my fingers and think “ooh gross” (expecting it to be yummy and full of sugar!).. I can’t believe I never thought of making it into a slice.. Thanks for the idea!

  20. I made these on Aus day and loved them! Today I’m making a double batch into a slice but I’m going to try and add cherries and see if it is cherry ripe-ish!
