I have been hoarding this amazing roast pork belly Thermomix recipe for a good yearthe plan was for it to go into my first cookbook, but then I went with Indian, and then Asian – so I figure Christmas is the perfect time to share it with everyone.

Steamed meat isnt high on everyones list, but par cooking this in the Thermomix or Bellini then finishing it off in the oven is the best way to ensure fall apart, moist meat. I hope you all love this recipe as much as my family did.

Ingredients

  • 500 g apples - unpeeled, quartered
  • 20 g honey
  • 10 g fresh lemon juice
  • 1000 g water
  • 900 g pork belly - scored with 1 inch lines
  • 1 tbsp salt and a little olive oil for rind

Instructions

  • Add the apples to mixer bowl, chop for 5 sec/speed 8/MC on.
  • Add honey, lemon juice and water to mixer bowl, blend for 30 sec/speed 9/MC on.
  • Put the steaming tray in place, with the pork belly inside (either the deep tray or the flat tray, which ever it fits best in). Steam for 60 min/steaming temp/speed 2. In the mean time, preheat oven to 250°C or 480°F(or max temp) fan forced when there is 20 mins remaining.
  • Remove roast to roasting tray and pat the skin of the pork dry. Rub the rind with a little oil, then salt the rind liberally. Pour apple sauce around the base of the pork. Bake in the oven for 30 mins or until well browned. If your oven is one of those ovens that refuses to produce beautiful crackling, try putting it under a medium grill before serving.
  • Serve immediately with apple sauce from roasting tray.

Use your sharp blade for this recipe.
At step 3 if using an Intelli, put a tea towel over the steamer, use ST temp and speed 3. If using a Supercook, use 120°C or 250°F and speed 3.

  2. I made this for dinner tonight… It was soooooo good!! I put it in the oven for the half an hour but then under the grill for about 10-15 to get proper crackling, it was perfect, tender & melted in the mouth. Served it with smashed potatoes & coleslaw with Skinnymixers whole egg mayo as the dressing… Absolute perfection! Will definitely make this one again!

  3. This was absolutely delicious! It is the perfect dinner party dish as it is so simple. We had parents over for dinner last night and they loved it just as much as we did (so did the kids!). We popped roasted veges in the oven at the same time as the pork started and they were perfect by the time the pork was done (including the increase in temp and using the grill for the pork).

  7. OMG. Made this tonight and it was amazing. Had to finish the crackle off under the grill (stupid oven) but that worked a treat. Served it with roast potatoes and steamed veggies. Divine. Will be making it again for sure.

I loved how easy this was, usually I put my pork belly in the slow cooker for 8 hrs then crisp in the oven to get it this tender, I can’t believe I can get the same effect by steaming for an hour. Also I was cooking it to put into cold rolls so had no need for the Apple sauce so I instead used 1L water with cinnamon, cardamom, cloves and star anise and it worked a treat! Thanks for an awesome time saver

    As I have a KitchenAid Cook Processor that will not stir whilst using the varoma I had to make a slight variation to the method to cook the apples … I steamed them in the inner basket so they wouldn’t burn during cooking then tipped them & blitzed before adding them to the baking dish.
    Very happy with the result! Thank you for sharing recipe.

  11. I made this for tea tonight & it was beautiful. Unfortunately mine didn’t crackle in the oven, so I took it out & hubby did it in the spit. The apple sauce was a little brown, but still nice. I will definitely be making it again, only next time I won’t put the sauce in the baking tray until the pork is almost done.

  12. This is amazing! I had made stewed apricots for my baby just before I started making this, and decided not to clean the bowl. Sauce was great, husband very impressed.

  13. Tasty (as all Skinnymixer recipes are) and tender! My oven is a stupid oven and wouldn’t crackle the crackling so I used the griller, it still didn’t go well, but certainly not the fault of the recipe.

  14. I am not sure what went wrong but our pork was dry and chewy. It was quite bland too, but nothing but a little more salt can’t fix. The apple sauce was lovely. I am willing to try this recipe again though.

  17. One word. DEVINE! Not usually a fan of steamed meat but I had it in the oven for half an hour to crispen up the cracking & it was delicious. Apple sauce is fantastic too, sooo much better than the apple sauce You get from the supermarket.

  18. I made the skinnymixers pork belly as part of our Xmas lunch along with my normal glazed ham and turkey roll. It turned out really well with compliments all round. Considering I am still wearing my L plates as far as the varoma is concerned and we finished the pork in the bbq because the oven was full of roast veges. But the apple flavour went all the way through the meat and it had the best crackling ever.

  19. I cooked the Pork Belly as a part of our Xmas dinner., it was so moist and delicious ..
    I used another sticky Asian sauce recipe to go with it.. but will cook again using the recipe as is. As the Pork was so good.

  20. We made this for our Christmas dinner this year and OMG. Delicious doesn’t even describe it. It was amazing. Hubby who isn’t a massive pork fan, absolutely loved it and has requested that we do it at least once a month.
    Even 3 picky kids devoured it!
