What would you cook for a MasterChef Perino tomatoes mystery box challenge ? I had so many ideas but I decided to go with my heart… a beyond delicious Roasted Tomato Pasta drizzled with basil oil and topped with oozing burrata.
I have been using Perino tomatoes for years, and my kids also have them in their lunch boxes every week. They make an excellent snack food!

This recipe can be made with a Thermomix or blender – you will need an oven to slow roast the Grape Tomatoes though.
My kids & I absolutely loved this for an easy mid-week dinner and even had plenty left for lunches.
It does make an absolutely STUNNING feature on any table when entertaining. Honestly, who can resist an oozing Burrata?!
If you can’t find Burrata, you could use fresh Mozzarella or even a beautiful Feta. The ooze of the burrata mixes beautifully with the roasted tomatoes to coat the pasta though.
For my Dairy Free and Gluten Free Skinnymixers
- Dairy Free – Simply omit the burrata or replace with your favourite dairy-free cheese.
- Gluten Free – As we cook the pasta on the stovetop, you can easily cook as per packet instructions
- Lower Carb – Replace cooked spaghetti with fresh zoodles and really measure that Basil Oil with your heart. You might like to reduce some of the grape tomatoes and add some zucchini to be roasted also.
skinnymixer's Roasted Tomato Burrata Pasta with Basil Oil
Ingredients
Pasta
- 400 g Medley Perino Tomatoes - halved
- 40 g olive oil
- 5 cloves garlic - peeled, thinly sliced
- 1 handful fresh basil leaves
- 1 large pinch sugar
- ¼-½ tsp salt
- 500 g spaghetti - cooked as per packet, gluten-free if required
Basil Oil
- 1 bunch fresh basil leaves - approx. 30 g
- 200 g olive oil
- ½ tsp salt
To Serve
- 1 Burrata - or fresh mozzarella or Feta
- 1 handful fresh basil leaves
- chilli flakes
- freshly grated Parmesan cheese
- finely grated lemon zest
- Optional toasted sourdough bread or bread of choice
Instructions
- Preheat fan-forced oven to 180℃.
- Arrange 2/3 of the tomatoes, garlic and basil on a non-stick baking tray. Drizzle with olive oil, sugar and salt.
- Oven bake at 180℃ for 20-30 min until soft and slightly charred. In the meantime, prepare your pasta as per packet instructions and make your basil oil.
- Basil Oil: Blanch basil for Basil Oil by pouring boiling water over basil in a sieve. Immediately cool leaves with cold water. Squeeze out moisture and pat dry with paper towel. Blend basil, oil & salt in a blender or 10 sec/speed 7/MC on in the Thermomix.
- Drain your pasta and transfer to a serving bowl. Stir through roasted tomatoes and salt to taste - add all of the yummy goodness from the roasting tray including the oil. Top with remaining fresh tomatoes, fresh basil, chilli flakes, Parmesan and lemon zest. Burst the burrata on top and drizzle with some Basil Oil.
