Shepherd’s Pie is a true winter classic… A great way to create a budget friendly, veggie filled meal in the Thermomix that is both delicious and comforting.

I opted to use low carb potatoes in mine, but you could easily substitute them with sweet potato or alternatively this popular mashed cauliflower recipe. To make this a complete meal, you can steam vegetables from step 5 if you wish, and you can also opt to make it dairy free or top with grated cheese too! Enjoy.

Ingredients

Mince Ingredients

  • 1 medium brown onion - peeled, halved
  • 1 medium carrot - roughly chopped
  • 2 cloves of garlic - peeled
  • 30 g olive oil
  • 300 g liquid beef stock - or 300g | 10.6 oz water + 1 tbsp beef stock concentrate
  • 70 g tomato paste
  • 5 g worcestershire sauce - or soy sauce
  • 1 tsp paprika
  • 1/4 tsp cracked black pepper
  • 500 g lamb - or beef mince
  • 100 g frozen peas

Rustic Mash

  • 500 g potatoes - unpeeled, cut into small cubes
  • 30 g butter
  • 30 g cream
  • 1/2 - 1 tsp salt

Instructions

  • Add onion, carrot and garlic to mixer bowl. Chop for 3 sec/speed 6/MC on. Scrape bowl down.
  • Add oil and cook for 5 min/100°C or 212°F/speed 1/MC off.
  • Add stock, tomato paste, worcestershire sauce, paprika and pepper to mixer bowl.
  • Insert simmering basket and put the mince inside the simmering basket.
  • Put your deep steaming tray in place with the potatoes inside. Cook for 20 min/steaming temp/speed 3. Break mince up with a spoon carefully half way through cooking.
  • Set your mince aside in your baking dish, preheat your oven to 200°C or 400°F and continue to cook potatoes for a further 5 min/steaming temp/speed 3, or until cooked.
  • Stir through peas and desired amount of gravy (liquid in the mixer bowl) through the mince.
  • At this point you can choose to rinse the mixer bowl if you want to, put your potatoes into the mixer bowl with butter, cream and salt - mash briefly for 3-4 sec/speed 4/MC on.  Repeat if required.
  • Top mince mixture with rustic mash and bake in the oven for 20 min, or until golden brown.

Bellini Users
Use your sharp blade for this recipe.
At step 5 use ST temp if using an Intelli and 120-130°C or 250-270°F if using a Supercook.
At step 6 use ST temp if using an Intelli and 120-130°C or 250-270°F if using a Supercook. Add on a extra cooking time if required.
At step 8 process until desired mash consistency.

  1. OMG this is absolutely delish and SO quick to make. It was a hit in our house and will definitely be a regular

  2. Made the mince mix to be hcg compliant(omitting oil and subbed cali stem for carrot). Turned out great and made 5 x 174g portions.
    The stock paste you use is a large part of the flavour profile. I had the healthy mix chicken stock ready to go and that is what I used.
    I found it to be rich and lovely. I will make some compliant cauliflower mash to top them.
    A nice change from salads and zoodles.

  4. I made this yesterday and fell asleep while it was cooking in the oven. Luckily my oven turns itself off, but when I woke up hours later, it was very, very well done. Hubby said he would eat it anyway and he absolutely loved it. I am going to make it again and try not to fall asleep, so can see how much more he will like it then. I served it with cauliflower bake. When I make something new I always ask for a score out of 5 and he gave it 6.
    Have told him for future reference that if I fall asleep and have something in the oven, to take it out when time has finished (I have MS and can fall asleep very easily and often)
    Will come back and make another comment next time 🙂

  6. Another easy, delicious meal. I didn’t have peas, so used corn and added a can of red kidney beans. I also sprinkled some cheese on top.

    1. I’ve been looking for a recipe to replace the packaged mince cottage pie meal base that my family loves. After seeing your comment, I added ground ginger, garam masala, tumeric and a can of chopped tomatoes when cooking the gravy mixture and everyone loved the flavour.

  7. Thanks for another great recipe Nik. Such an easy, quick recipe and another bonus was that I already had the ingredients at home. The whole family loved it. My sone went back for seconds. Will make this again but next time I’m going to use frozen peas and corn.

  8. Found the mince bland after following the recipe so added couple of tea spoons of gravox and re cooked in machine for 2 mins then into oven and was delicious!!

    1. I put in 15g of Worcestershire sauce rather than 5g (accident lol) and slightly more beef stock concentrate and it was delicious.

  17. I have just cooked this to freeze for a friend who has had a baby. How long would you cook it straight from the freezer?

    I had a sneaky taste and it was delicious!!! I will have to make it for us tomorrow night. Luckily, it is so quick and easy to make.

  18. I made this for dinner tonight- I used beef mince, added in a few extra veggies for my one year old, and blended the potatoes a bit longer because we like a creamy mash and it was absolutely delicious. So simple. Perfect for a cold night in Melbourne. Another winner Nik!

  19. this is on my to make this week list. i have everything, except the peas, i never have peas, i feel about peas the way some people feel about coriander. anyway, this will be made this week.

    also, a small editing recommendation. step 7 would read better if the 1st instance of ‘through’ was removed.
