Shepherd’s Pie is a true winter classic… A great way to create a budget friendly, veggie filled meal in the Thermomix that is both delicious and comforting.

I opted to use low carb potatoes in mine, but you could easily substitute them with sweet potato or alternatively this popular mashed cauliflower recipe. To make this a complete meal, you can steam vegetables from step 5 if you wish, and you can also opt to make it dairy free or top with grated cheese too! Enjoy.

Ingredients

Mince Ingredients

  • 1 medium brown onion - peeled, halved
  • 1 medium carrot - roughly chopped
  • 2 cloves of garlic - peeled
  • 30 g olive oil
  • 300 g liquid beef stock - or 300g | 10.6 oz water + 1 tbsp beef stock concentrate
  • 70 g tomato paste
  • 5 g worcestershire sauce - or soy sauce
  • 1 tsp paprika
  • 1/4 tsp cracked black pepper
  • 500 g lamb - or beef mince
  • 100 g frozen peas

Rustic Mash

  • 500 g potatoes - unpeeled, cut into small cubes
  • 30 g butter
  • 30 g cream
  • 1/2 - 1 tsp salt

Instructions

  • Add onion, carrot and garlic to mixer bowl. Chop for 3 sec/speed 6/MC on. Scrape bowl down.
  • Add oil and cook for 5 min/100°C or 212°F/speed 1/MC off.
  • Add stock, tomato paste, worcestershire sauce, paprika and pepper to mixer bowl.
  • Insert simmering basket and put the mince inside the simmering basket.
  • Put your deep steaming tray in place with the potatoes inside. Cook for 20 min/steaming temp/speed 3. Break mince up with a spoon carefully half way through cooking.
  • Set your mince aside in your baking dish, preheat your oven to 200°C or 400°F and continue to cook potatoes for a further 5 min/steaming temp/speed 3, or until cooked.
  • Stir through peas and desired amount of gravy (liquid in the mixer bowl) through the mince.
  • At this point you can choose to rinse the mixer bowl if you want to, put your potatoes into the mixer bowl with butter, cream and salt - mash briefly for 3-4 sec/speed 4/MC on.  Repeat if required.
  • Top mince mixture with rustic mash and bake in the oven for 20 min, or until golden brown.

Notes

Bellini Users
Use your sharp blade for this recipe.
At step 5 use ST temp if using an Intelli and 120-130°C or 250-270°F if using a Supercook.
At step 6 use ST temp if using an Intelli and 120-130°C or 250-270°F if using a Supercook. Add on a extra cooking time if required.
At step 8 process until desired mash consistency.

I used pumpkin for the mash instead of white potato… Cut it larger so the cooking time would work.. also added extra150g of sweet potato … Sauce/gravy was so delicious and I used Roo mince! Mmmmmmm thanks Nik, dd2 coincidentally cooked this tonight also! Loved it too!!!!

  4. This is the best recipe ever! Especially with the cheeky bacon & onion. How would I go about making a double batch? The boys want more and more and more!

    1. Probably not wise, but I did double the recipe (just slightly less water) and watched very carefully – it worked but was very close to overflowing liquid from jug (I think mince was a little too compacted to drain quickly through). I’d recommend caution if you are going to try it:-)

  5. This was a complete hit at my house, with 2 fussy 6 year olds, and a 1 year old who would gladly eat only cheese for every meal – it was gobbled up in minutes, 2 nights in a row! I used sweet potato instead of white potato, as we eat low carb, and I also fried onion and bacon to mix through the mash. I then baked it with Parmesan cheese on top, and it was absolutely delicious. I used vege stock instead of beef (as I didn’t have any), and I’ve just realised I forgot to put butter with the mash (but it didn’t need it).
    Highly recommend this!

  6. Made this last night – it was delicious – it was great to have a meal that the whole family enjoyed! I added a zucchini in step one & bacon & onion to the mash as well as a bit of cheese before baking- will definitely make again . Thanks for a great recipe Nik 🙂

  8. My 10 year old son is reluctant to try new meals unless it’s a Skinnymixers meal. So tonight I served the pie up, after the first mouthful he said we will be having this again and then cleaned his plate. My daughter served herself a second serve I’m content but it’s just SO good, so I’ll have a little bit more. Thankyou xo

  9. Loved it! Made it with white + sweet potato mash, + bacon & onion – I’m willing to bet that the original recipe is great, but bacon & onion makes everything better!!

  11. I’ve made this twice now and it’s great. I added a grated zucchini to the mince so it didn’t get chopped up too much. I only had beef stock cubes so added one and a half of those. Neither my husband or I are fans of shepherd’s pie so I was pleasantly surprised at how nice it was. Thanks for the recipe!

  12. This was a hit here! I often struggle to please hubby, who after almost 2 years of thermie cooking, still say “meh” to a few meals. This one was a good winner!! I used lamb mince and liquid beef stock, but I will try with beef stock paste next time.

  13. Made this tonight and it was amazing! I found the flavour to be rich and full but I was heavy handed with the worstershire and paprika. I added cubed carrot to the steamer with the potato as the carrot in the bowl disappeared and included it with frozen peas and corn in the mince mixture before baking.
    I only ever use the BCB vegetable stock and usually include half a teaspoon of either chicken or beef massel stock powder if an alternate flavour is required.
    Also added a little bit of cornflour to thicken the gravy in the last 5 minutes. Yum!

  14. Just wondering would this dish and your other ones (in particular the famous butter chicken) that have chicken or beef stock on ingredient list be replaced with the veggie stock from the bcc? This is what I have on hand.

    I had a couple of changes – 20g worstershire sauce and thyme instead of paprika because I had run out. Used cauliflower mash instead of potato and the whole family liked it.

    I agree with another comment that suggested what beef stock you use affects the taste of the dish, I used beef stock paste from the BCB and it was delicious.
