  • 30 g butter
  • 30 g thickened cream
  • 30 g full fat milk
  • 6 eggs
  • tsp salt
  • 2 GLAD Snap Lock sandwich bags **

  • Melt butter for 2 min/50°C or 120°F/speed 1/MC on.
  • Add cream, milk, eggs and salt to the melted butter in mixer bowl and blend for 20 sec/speed 3/MC on.
  • Divide mixture evenly into the two Snap Lock sandwich bags and half seal the bags.
  • Roughly wash mixer bowl.
  • (TM5 only) Add 1,700 g or 60 oz water to mixer bowl.
  • (TM31 only) Add 1,400 g or 49 oz water to mixer bowl.
  • Take one bag at a time and slowly immerse in the water to squeeze excess air out of the Snap Lock bags and seal them, taking care not to let any water inside.

  • Heat water for 8 min/80°C or 175°F/speed 2/MC on.
  • Add internal steaming basket containing Snap Lock bags to mixer bowl.
  • Cook for 14-15 min/80°C or 175°F/speed 2/MC on.
  • After 7 min, stop mixer and massage egg mixture to ensure even cooking taking care not to burn yourself!
  • When cooking has finished, check eggs are cooked to your liking and serve immediately by breaking up mixture lightly onto plates.
  • Serve with freshly cracked black pepper and an additional sprinkling of salt. Enjoy xx

This makes two large serves of scrambled eggs; it can be halved for a single serve with one Snap Lock bag.
You shouldn't change the ingredient quantities at all, and if you do please don’t be surprised about the eggs not turning out – this is a very precise recipe.
You should *ONLY* use the brand GLAD Snap Lock sandwich bags, I have tested this with other lesser quality brands and they melted. GLAD Snap Lock sandwich bags are declared safe to heat food in.
You can use the food vacuum bags if you have a vacuum sealer.
This recipe was inspired by Heston Blumenthal’s “Scrambled eggs with brown butter” recipe; however the ingredient quantities and method have been adapted for use with thermal mixers.

At step 6 add 1400g water or 49 oz to your jug.

I have to give Andrea Lee over at Forking Foodie credit for suggesting Sous-vide scrambled eggs on the skinnymixers facebook group, and pointing us towards Heston’s recipe for inspiration 🙂 Thanks Andrea. These are the best eggs I’ve ever eaten! xx

  1. I love, Love, LOVE these. I do not eat eggs, I have never been an egg fan. I made these for my toddlers and my little toddler (who is also not a fan of eggs) did not eat hers, so I tried them, thinking ‘I have loved every single recipe I’ve tried from Nikalene/Skinnymixers, maybe she can fix eggs’. And I love them, it’s like magic. Thank you for this and all the other recipes on the blog!

  2. Yummo! I am not a fan of scrambled Eggs so was initially just making this for my hubby but I ended up eating a whole serving myself too! Easy to do and will never have eggs another way again. Best eggs ever.

  3. Eggs are amazing. Hubby says they taste like from a restaurant. Lucky the recipe is easy as he will want these all the time. Thanks Nikalene.

  4. OMG! Best scrambled eggs ever!!! A little time consuming compared to how I used to do them but so worth the extra effort 🙂

  5. Wow! These are great! I subbed Nuttelex and goat milk for my son in one half and then couldn’t distinguish the two. Next time I’ll remember to mark it but good to know it works both ways. My son says yum yum.

  6. These eggs were amazing! Hubby said 10/10, best eggs he’s had. I exactly halved the recipe but kept the same cooking time and they were perfect. Thanks for the recipe Nikalene!

  7. OMG OMG totally amazing. I have been demoted from queen of scrambled eggs in my home to Princess haha. Absolutely delish

  8. Love love love these! I made the full recipe and just put one of the packets in the fridge so I could have it for dinner and breakfast – still worked perfectly the morning after. Thank you for this amazing recipe!

  9. This was delicious! Was worried about the snaplock method but it isn’t as hard as it sounds. Will definitely be making this again.

  10. I make these with cream in place of the milk. Also a sprinkle of onion powder sometimes. Absolutely beautiful. I make them for all my LCHF friends too.
Thanks for the recipe, these come out so much better than any other method I’ve tried!

  11. Best scrambled eggs ive ever had….and I made them! Ive raved on about them so much I think ill be taking orders soon.

  12. These were bloody awesome! My 2yo son and I shared 1 serve (generous) for breakfast with sautéed spinach and mushrooms and they were so yummy! Velvety smooth and creamy. Barely any clean up too. A++++

    Kudos to you Nik!

  13. I made these today with a few changes no cream doubled the milk which was skim milk and they still turned out amazing! Also I used the ikea zip lock bags and cooked them in one bag not 2. Thanks il be making these for the kids more often

  14. I just cooked these for me and my son for breakfast and they are absolutely delicious! So light and fluffy! They are also super filling too 🙂 this will definitely be my go-to recipe for scrambled eggs!

  15. Made these this morning in my TM31…. After I’d melted butter I realised I didn’t have any cream… Decided to adapt and see how it went. I added an extra 15g of butter and milk instead of cream.. They worked and tasted amazing… Very fluffy! Will try with cream next time as I’m sure it’s even better again with the cream! My kids loved them too.

  16. Deliciously decadent. Heed Nikake’s advice – coles bags did not work! 380 cals =fat 32.5g, protein 19.4g, carbs 1.7g

    1. Thanks for the information – converted to weight watchers points = 10 so hopefully this was for the full recipe

  17. i just made a half quantity of these eggs to share with my 4 year old for lunch… My word they are lovely! So creamy and delicate, a completely different mouth feel than you get from other scrambled eggs. I’m afraid you’ve ruined me for scrambled eggs anywhere but home. Another pus is next to no mess (just a small glad lock bag to throw out) and I feel like I’ll be full for hours.
The little man said “these eggs are good mum, real good”.
    Thanks Nikalene!

  18. These are fantastic. Easily the best scrambled eggs I’ve ever tasted. My Coles didn’t have Glad snap lock, so used Hercules non biodegradable and they worked fine in my TM 31. Thanks again Nik there hasn’t been a recipe of yours that we haven’t loved.

  19. Looking forward to trying this. For a lighter version do you think low fat ricotta in place of cream and skim milk in place of full cream would work? Not essential but just a thought.

Love your work (and persistence) Nikalene!

    1. You could try it, but Heston warns not to adjust the recipe at all – and if you do, you cant be upset if it fails LOL

  20. Ladies and gents you have to try these scrambled eggs seriously the best scrambled eggs I have ever had !!

My daughter who has travelled the world and is a massive breakfast fan agreed with me

    Thanks nikkalene !!!
