Healthy Carbonara

Chances are there are very few people who don’t enjoy a really well made carbonara recipe… but there are plenty of people like me, who unfortunately for various reasons, can’t indulge in it as often as they may like!

This carbonara recipe is the star of ‘The Healthy Mix’ for me, because it really captures the essence of a good carbonara without the guilt, carbs and bloating. What I love about this Thermomix recipe is that it also makes enough for two separate meals so you can also use it to make a healthy Lasagne.

    Keep coming back to this recipe – my 6 year olds favourite dinner! I don’t usually like white sauce pasta but I really love this and was surprised actually that cauliflower can actually taste ok 😆

    Cauliflower for a sauce sounded crazy to me, but it was awesome! The flavours were amazing and less labour intensive that making my usual car-banana LOL. Clean bowls all round. Definitely making again.

    Loved this Carbonara dish. Made it with pasta – next time I will try with zoodles. A guilt free whit sauce – that’s simply amazing. I licked the bowl before washing up.

  4. The sauce when finished didn’t amaze me. I added a decent crack of black pepper and some cheese and a dash of Dijon
    May not make the cut as “skinnymixer” but it made my tastebuds happier
    Great base to work from though

  5. I don’t understand how this recipe works but it DOES! My daughter and I both hate cauliflower but curiosity got me and I gave it a whirl. WOW! Demolished by us all for pasta and also in a lasagne! Well done Nik, I don’t know how you figured this could work but hats off to you!!

  6. Loved this as a carbonara sauce. Served it over zoodles for me and pasta for the rest of the family. Added a good crack of pepper for the adults. Everyone loved it. Thankyou!

  7. Easy to make and yummy. I have tried it both with and without the egg yolks, definitely recommend adding the egg yolks for extra flavour and creaminess.

  8. Made this last night for tea for hubby and me, added diced chicken thighs to the bacon and mushrooms mix (just because they needed to be used)! very clever cauliflower white sauce, yum, will be making again. just a pity that caulies are so expensive at the moment, thanks for a great recipe!

  10. Made this for dinner last night, I had it with zoodles and carrot noodles and my husband had it with pasta. Mine was so good but my husband didn’t like it because the sauce was too thick, I think mine was thinner from the liquid released by the zucchini. I added the eggs based on these reviews. I also added a sprinkle of tasty cheese on top, but had leftovers for lunch today without cheese and it was just as good.
