- No Chicken Stock Concentrate? We highly recommend making Niks Chicken Stock Concentrate for best results! Vegetable stock concentrate will work. You can also replace the water with liquid stock.

- Dairy-free – Use dairy-free butter and dairy-free cream of choice. The Flora plant cream is great for sauces like this, as it doesn’t leave a coconut taste.
- Gluten-free – You can get gluten-free Panko crumbs from Woolworths.
- Egg-free – You can replace with buttermilk.
- Low carb/Paleo – Replace Panko breadcrumbs with sesame seeds and almonds. Replace cornflour with xanthan gum.
- Lower calorie – Omit Parmesan and egg. Cut chicken breast into thin steaks and brush with Greek yoghurt to coat in crumb. Bake lightly sprayed with oil. Use low-fat cream.
- Alcohol Free – Use verjuice.
- Vegetarian – Replace pork with 2 tins drained cannellini beans plus 2 eggs and an extra ½ cup breadcrumbs. Use vegetable stock concentrate.
- Low Fodmap – Use gluten-free panko crumbs and flour. Use lactose-free cream. Omit garlic powder and garlic. Replace onion powder with dried chives. Replace butter with garlic infused olive oil. Use Oyster mushrooms and compliant stock.
How to Cook
- Grate cheese and combine with remaining crumb ingredients.
- Mix pork mince with a portion of the crumb to form the schnitzel mixture.
- Sauté garlic, butter and mushrooms, deglaze with wine, then add remaining sauce ingredients and cook until thickened. Finish with lemon juice and cheese.
- Shape the pork mixture into schnitzels about 1 cm thick.
- Coat each schnitzel in flour, egg and crumb.
- Shallow fry in batches for 5 minutes each side until golden and cooked through.

Storage & Meal Prep

FAQs
I don’t like mushrooms, can I leave them out?
We recommend following the Wholegrain mustard option in the recipe to omit the mushrooms.
Can I use normal breadcrumbs?
We found Panko to have the best texture for this recipe, though you can use normal ones if needed. You may need extra to coat the schnitzels.
