This Southwest Potato Salad will become a barbecue favourite with the sweet pops of corn, salty crispy bacon and creamy Southwest dressing on the potatoes, sweet potatoes and crispy capsicum.

This Southwest Potato Salad really does have it all!

The chipotle peppers in adobo sauce add a lovely smokiness and big flavours with a bit of heat. If you aren’t a fan of spicy, try using the lower range for the chipotle peppers in adobo for the recipe.

  • Greek yoghurt – we use Greek yoghurt to add protein and help add creaminess without as many calories. For Dairy-free you can use an almond, soy or coconut Greek style yoghurt.
  • Creamy Mayonnaise or whole egg mayonnaise – you can make your own from the Basics section in the cookbook or use a good quality whole egg mayonnaise.
  • chipotle chilli in adobo sauce – you can typically buy this in a jar or a can from the Mexican section at the supermarket.

Instructions

Notes

Serve as a side dish or mix through some cooked chicken and baby spinach to make it a complete meal. Garnish with parsley or spring onion.
Store in the fridge in an airtight container for up to 3 days.
