Skinnymixer’s Coconut Rice features in the cookbook SkinnyAsia. If you are looking for a delicious, light and fragrant Coconut Rice recipe to cook in the Thermomix or stovetop – this is the healthy Thermomix recipe for you.

Coconut Rice is one of my favourite sides to serve with coconut based curries and complements so many Thai, Indian and South Asian tropical dishes.

What you will need:

  • Jasmine Rice – you can use other long grain rice varieties although you may need to cook longer.
  • Light Coconut Milk – I prefer the AYAM Light Coconut Milk for taste and calories. You can use normal coconut milk in a tin also.
  • Pandan Leaves or Makrut Lime Leaves – the pandan and lime leaves are optional. You can buy pandan from your local Asian grocer and you can buy makrut lime leaves in the fresh herb section of major supermarkets.
  • Skinnymixer’s Stock Concentrate or salt – if you haven’t made the Skinnymixer’s stock concentrate I highly recommend doing it. It is the secret sauce for extra flavour! You can use Vegetable or Chicken Stock Concentrate.
