Skinnymixer’s Banana, Walnut & Date Loaf

So many people ask ‘What is the best Banana Bread Thermomix recipe?’ 

Hardly an original recipe concept, but this Banana, Walnut & Date Loaf is delicious, grain free, dairy free and very low in unrefined sugar. 

It’s definitely something I still consider a treat food, because I have about 8 kg to go with my weight loss and I have found that nuts don’t seem to work for me; but its a great after school snack for the kids and I wouldn’t think twice about serving this to them for breakfast either.

Ingredients

  • 330 g raw almonds
  • 3 eggs
  • 250 g over ripe banana flesh - 3 large bananas
  • 70 g coconut oil or butter
  • 25 g honey or liquid sweetener of choice - increase if you like it sweet
  • 1 tsp ground cinnamon
  • 1 tsp vanilla bean paste or powder
  • 1 tsp bicarbonate soda
  • 50 g walnuts - chopped small (optional, you can use any nut you like too)
  • 50 g medjool date flesh - chopped small (optional)
  • Optional: sliced banana for garnish

Instructions

  • Preheat oven to 180 °C or 350°F fan forced and either grease/line a standard loaf tin, or use a silicone one.
  • Add 165 g or 5.8 oz of the raw almonds to dry mixer bowl, mill for 10 sec/speed 9/MC on or until fine. Set aside.
  • Add remaining raw almonds and mill for 10 sec/speed 9/MC on.
  • Add the rest of the ingredients, including the reserved ground almonds, but excluding the walnuts and dates, and mix for 15 sec/speed 5/MC on.
  • Scrape bowl down, add walnuts and dates, and blend for a further 5 sec/speed 4/MC on.
  • Remove cake batter to prepared loaf tin, garnish with banana slices if using, and bake in the oven for 40 min or until cooked. Please note, depending on your oven and the size/depth of your loaf tin, timing can be variable. You want a skewer to come out clean.
  • Allow cake to cool completely before slicing.

Use sharp blade for this recipe.
At step 2 mill for longer if required.

  2. Lovely. Only had 160g of almonds so used cashews for the rest but only blitzed them for 5 secs instead of 10. Didn’t add any sweetener. Will definitely be making again, maybe with extra dates because I love biting into the pieces!

  4. I made this and it was amazing! Definitely a winner and a make-again recipe. We had it for breakfast, sprinkled with a little cinnamon/coconut sugar mix, warmed honey and Greek yoghurt. Yummo!!

  8. This banana bread is absolutely delicious. It was so quick to put together and pop in the oven whilst getting the kids ready for school. I sliced it up and put it in the freezer. I love eating it straight from the freezer and just like that, the whole loaf is gone!
    Note: I only used 35g coconut oil, not quite 50g dates (I had 3 left) and I totally left out the sweetener and it was perfect.

    This is delicious!! I made this the other night for my 16 yr old, 6’4 tall son who has always been a very fussy eater! He has devoured it, in fact refused to take it to school as wanted to “save it until I get home and can enjoy it properly” and now wants to learn how to make it! guess what is on todays’ agenda – once he gets out of bed!!! (that and his first driving lesson)!.

  13. This is the best grainfree banana bread I have ever eaten! I don’t think I will look further than this recipe if I am looking to make banana bread. It simply ticks all the boxes for taste and texture.

    I made with cashews as I didn’t have walnuts. in my oven, cooked in a silicone pan, it took an hour and 10mins. I reduced the temp to 160°c for the final 20mins whilst the centre top of the bread cooked through.

  14. I made this last night – so delicious; moist with a crunch from the walnuts, nice level of sweetness. Will be making again – there’s always a couple of overripe bananas in the fruit bowl by the end of the week!
