The skinnymixer’s Chunky Bolognese has been a popular recipe on the Thermomix Recipe Community for a few years now, and has some fantastic 5 star reviews. Recently I asked the community who felt like they were not using their Thermomix or Bellini as much as they thought they should be, nearly 3,000 people responded…

and so I launched a new initiative called Simple Meal Sunday, to inspire and encourage people to use their machines more. This spaghetti recipe is fantastic because its simple, healthy and budget friendly. It can also be reinvented into so many different kinds of meals, from Chilli Con Carne (using my Mexican Spice Mix), to Shepherds Pie (using my Silky Sweet Potato Mash) to name a few.

I have included both the low calorie/quick version which is HCG compliant and a version using fresh ingredients.

Ingredients

  • 1 tsp onion powder - or 1 medium brown onion, peeled and halved.
  • 1 tsp garlic powder - or 1 garlic clove peeled
  • 20 g olive oil - omit for quick version
  • 700 g tomato sugo/passata - from the supermarket
  • 50 g tomato paste
  • 30 g water
  • 20 g worcestershire sauce - optional, omit for p2
  • 1 tbsp stock concentrate
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/8 tsp cinnamon
  • 1/2 tsp dried chilli flakes - (optional)
  • pinch cracked black pepper
  • 700 g beef mince

Instructions

Quick & Low Calorie Bolognese

  • Add all ingredients to the mixer bowl, except for the mince.
  • Insert your simmering basket into the bowl and put your beef mince inside. Cook for 15 min/steaming temp/speed 4/MC on.
  • Carefully break up the mince with a spatula, cook for a further 15-20 min/steaming temp/speed 4/MC on. or until cooked.
  • Put your cooked mince into a serving bowl and pour your sauce over before serving.

Fresh Ingredient Bolognese

  • Add your onion and garlic to the mixer bowl, chop for 3 sec/speed 9/MC on. Scrape bowl down.
  • Add olive oil to mixer bowl and cook for 5 min/100°C or 212°F/speed 2/MC off.
  • Add remaining ingredients to the mixer bowl, except for the mince.
  • Insert your simmering basket into the bowl and put your beef mince inside. Cook for 15 min/steaming temp/speed 4/MC on.
  • Carefully break up the mince with a spatula, cook for a further 15-20 min/steaming temp/speed 4/MC on or until cooked.
  • Put your cooked mince into a serving bowl and pour your sauce over before serving.

Notes

This makes a large serve of bolognese, which will comfortably serve 6.
Smaller serve: You can halve this recipe by halving all of the ingredients and reducing the cooking time by about 3 minutes.
You can use chicken, pork or lamb mince as well.

Quick & Low Calorie Bolognese
Use blunt blade for this recipe.
At step 2 & step 3 use speed 3.
If using a Supercook, use 120°C or 250°F at step 4 & 5.
Fresh Ingredient Bolognese
Use blunt blade for this recipe.
At step 2 increase cooking time if needed.
At step 4 & 5 use speed 3.
If using a Supercook, use 120°C or 250°F at step 4 & 5.

  1. Made this tonight. OMG seriously the best bolognaise I have ever had. And it was a serious hit with the kids so definitely will be a regular in this house. Made my own passata for it too which I think added to the flavour. Yum.

  2. Dumb question but I rarely use stock.. Do I add water with the 1tbs stock concentrate?! Or is the 30g in the ingredients enough? Lol!

  5. I made this as part of the Simple Meal Sunday event. Good quality beef mince is not cheap here (Malaysia) but I’m so glad I splurged. This recipe made a laugh for 3 meals with leftovers for easy weeknight meals. I used the sauce with spaghetti and also as a topping in a cheesy baked pasta. Love your recipes!

  10. This recipe converted me from a Bolongsise hater to a lover. It’s tasty, easy & a hit all round. I only had half the mince suggested in the recipe so I added diced veggies to make up the weight & cooked in the varoma at the same time.

  11. Simple meal Saturday here and it was delicious!!

    Didn’t have enough passata so used tinned tomatos instead and held off on the chilli flakes for the two year old.

    Served it with zucchini and carrot noodles and some pasta and it was delicious! Thank you for another easy that gives the illusion of talent in the kitchen.

    As per someone else’s comment, I added a grated carrot and zucchini with about 10 mins to go.

  17. Tried this tonight after having fails with spag Bol in the Thermie before. It was fantastic! The kids loved it and I added some grated carrot to the bowl at the start and served with zoodles for added veg. Will be making this a regular in our house!

  18. i was wondering if anyone would know calorie content of this compared to skinnymixer meatball recipe? I made that last week with the zoodles it was delicious but if this was lighter in calories I would try this as well? Thanks

  19. We LOVE this meal in our house! I make it weekly as its my girls all time fave spag bog recipe. After making mushy spag bog twice in the TM I gave up, until I found this. It’s delicious, incredibly simple & I add grated carrot & zucchini in the last 10 minutes to get some veggies in 🙂 thanks Nik for such a winner x

  20. I tried to convert my normal bolognaise to the tmx and had an awful purée outcome that was inedible. Then I tried this and it’s even better than my original stovetop!! Kids loved it too. The cinnamon is the winning secret ingredient I think!

      1. I find mince in the bowl goes grainy. Even in reverse it gets too chopped up. I find on the basket the sauce still bubbles through bi the mince isn’t hacked by the blades. I find it much tastier.

    1. It does still cook in the sauce, even though it’s in the steamer basket. I was amazed – combination of speed four and varoma temp, the sauce bubbles up all through the mince. I’m a convert!

  21. This spag bol is amazing! Has such a great texture unlike many mince dishes done in the bowl. Definitely worth making.

  22. Looking forward to making this Nik. Quick question for you.. is there enough space in the bowl to be able to add some hidden veg to this meal?

    1. I added a carrot and mushrooms, there wasnt room in the basket for the mushies so they did get pulverised! But sooooo delish, this will be a regular in our house!
