skinnymixers Chunky Bolognese

The skinnymixer’s Chunky Bolognese has been a popular recipe on the Thermomix Recipe Community for a few years now, and has some fantastic 5 star reviews. Recently I asked the community who felt like they were not using their Thermomix or Bellini as much as they thought they should be, nearly 3,000 people responded…

and so I launched a new initiative called Simple Meal Sunday, to inspire and encourage people to use their machines more. This spaghetti recipe is fantastic because its simple, healthy and budget friendly. It can also be reinvented into so many different kinds of meals, from Chilli Con Carne (using my Mexican Spice Mix), to Shepherds Pie (using my Silky Sweet Potato Mash) to name a few.

I have included both the low calorie/quick version which is HCG compliant and a version using fresh ingredients.

Love Nik xx

  1. My family loved this, and easy to make while my kids are going crazy in the afternoon . I smuggled in veggies by adding chopped zucchini into the sauce. Thanks for another yummy recipe Nikalene

  2. Absolutely delicious! Had to use tomato puree as I couldn’t get passata and also added finely chopped carrot and zucchini and it was amazing! Won’t be using any other recipe from now on!

  3. I was hesitant to make this after not enjoying the EDC Bolognaise Recipe (it turned me off mince in the thermy). We’ve now had your Chunky Bolognaise twice this week! We tried the quick version & the fresh version. My italian partner admits it’s the closest he’s had to his nanna’s! Thank you for a quick & delicious recipe 😊

  4. New staple!
We’ve always enjoyed bolognese as a regular family meal, and I’ve always cooked it the same way without needing a recipe. I’ve only recently purchased my thermi and without a doubt, I will never cook bolognese the “regular” way with my old recipe. The meat was so soft, the sauce was amazing and the flavours were just incredible. My husband has said its the best bolognese he’s ever eaten. Thank you for your incredible recipes!

  5. This was requested by my now nine year old for her birthday dinner and devoured by all! I leave the chilli flakes out (hubby adds them on his later) and usually add some diced veges/peas/corn/carrots for the last 20 minutes. Just yum. My family weren’t keen on Thermie spag Bol before this Skinnymixers version. Thanks Nik!

  6. Yummy so good I just made this for dinner with a few hidden veg thanks to nikki another amazing meal!!!
Skinnymixers every day is the way !!!!!

  7. Huge hit again tonight with the chunky bolognaise so tasty and not watery like other Thermie spag Bol I’ve tried to do …. And the zoodles were a perfect accompaniment …

  8. I had never had success cooking mince in my thermomix until I tried this recipe. It is now my go to such an easy recipe and perfect with zoodles!

  9. Made this for dinner a couple of nights ago and it was amazing! It’s so much tastier than the one in the basic cookbook – will definitely be making on a weekly basis – thanks!

  10. I love this, my husband loves this, my kids love this. So much easier than sitting at the hot stove stirring the mince so it doesn’t burn. Made quickly and tasted so much better than any other spag Bol I had made. Give it a go you won’t be disappointed.

  11. I spend hours cooking Bolognese on the stovetop to allow the flavour to soak in and decided to cook the Skinnymixers chunky Bolognese last night. It took 45mins and actually tasted better than my usual.. This will certainly be a regular on my menu!! Thanks Nik for sharing your amazing recipes.

  12. Made this last night for my family and my 3 boys LOVED IT! We had it with Zoodles and they all went back for seconds. There was no a single bit left. So simple and yum, will definitely be on the regular list from now on.

  13. My kids fav recipe, I add a few veg and the kids still eat the entire lot. This a fortnightly recipe in our house. So good 👍🏼

  14. This is the first spag bol recipe in the thermie that my husband has asked for again! It is on the menu plan most weeks coz the kids love it too!

Also the sauce is so good i made it in bulk and put in preserving jars for family for christmas!

  15. I made this last night and was quite sceptical as I love a good rich bolognese that simmers for hours. This will most definitely be out in rotation now on or menu! Perfect when I don’t have time or the inclination to spend hours watching the pot. Really impressed with this dish.

  16. We finally got to try this recipe last night and it was delicious! The whole family loved it and we liked that it lived up to its name and the mince stayed chunky 🙂

  17. I make this all the time. Recently I put a whole head of broccoli in and it tasted great. Kids had no idea! It’s also so quick for week nights.

  18. This is a family favourite – so tasty and it keeps the nice chunky consistency of a ‘traditional’ bolognese. Thanks Nik!

  19. Delicious! I always thought my bolognese was pretty good but this is so much better! Great depth of flavour and very easy as well.

  20. Best bologese sauce I’ve ever made. Mister 9 wanted to know when I learnt to make this and why didn’t I learn it earlier. My 5 year old asked for more sauce, normally only has a tiny amount. Hubby had two serves. This will be our go to from now on. Thanks
