The skinnymixer’s Chunky Bolognese has been a popular recipe on the Thermomix Recipe Community for a few years now, and has some fantastic 5 star reviews. Recently I asked the community who felt like they were not using their Thermomix or Bellini as much as they thought they should be, nearly 3,000 people responded…

and so I launched a new initiative called Simple Meal Sunday, to inspire and encourage people to use their machines more. This spaghetti recipe is fantastic because its simple, healthy and budget friendly. It can also be reinvented into so many different kinds of meals, from Chilli Con Carne (using my Mexican Spice Mix), to Shepherds Pie (using my Silky Sweet Potato Mash) to name a few.

I have included both the low calorie/quick version which is HCG compliant and a version using fresh ingredients.

Ingredients

  • 1 tsp onion powder - or 1 medium brown onion, peeled and halved.
  • 1 tsp garlic powder - or 1 garlic clove peeled
  • 20 g olive oil - omit for quick version
  • 700 g tomato sugo/passata - from the supermarket
  • 50 g tomato paste
  • 30 g water
  • 20 g worcestershire sauce - optional, omit for p2
  • 1 tbsp stock concentrate
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/8 tsp cinnamon
  • 1/2 tsp dried chilli flakes - (optional)
  • pinch cracked black pepper
  • 700 g beef mince

Instructions

Quick & Low Calorie Bolognese

  • Add all ingredients to the mixer bowl, except for the mince.
  • Insert your simmering basket into the bowl and put your beef mince inside. Cook for 15 min/steaming temp/speed 4/MC on.
  • Carefully break up the mince with a spatula, cook for a further 15-20 min/steaming temp/speed 4/MC on. or until cooked.
  • Put your cooked mince into a serving bowl and pour your sauce over before serving.

Fresh Ingredient Bolognese

  • Add your onion and garlic to the mixer bowl, chop for 3 sec/speed 9/MC on. Scrape bowl down.
  • Add olive oil to mixer bowl and cook for 5 min/100°C or 212°F/speed 2/MC off.
  • Add remaining ingredients to the mixer bowl, except for the mince.
  • Insert your simmering basket into the bowl and put your beef mince inside. Cook for 15 min/steaming temp/speed 4/MC on.
  • Carefully break up the mince with a spatula, cook for a further 15-20 min/steaming temp/speed 4/MC on or until cooked.
  • Put your cooked mince into a serving bowl and pour your sauce over before serving.

Notes

This makes a large serve of bolognese, which will comfortably serve 6.
Smaller serve: You can halve this recipe by halving all of the ingredients and reducing the cooking time by about 3 minutes.
You can use chicken, pork or lamb mince as well.

Quick & Low Calorie Bolognese
Use blunt blade for this recipe.
At step 2 & step 3 use speed 3.
If using a Supercook, use 120°C or 250°F at step 4 & 5.
Fresh Ingredient Bolognese
Use blunt blade for this recipe.
At step 2 increase cooking time if needed.
At step 4 & 5 use speed 3.
If using a Supercook, use 120°C or 250°F at step 4 & 5.

  2. Loved this recipe as apposed to the EDC which isn’t that appealing on the tastebuds.
    I had a bit of time over a coffee and made little meatballs instead of placing all the mince in the basket and having to chop up into chunks. Worked a treat. Everyone enjoyed the flavours. Thank you, another winner.

  3. I too added a carrot and zucchini in with the onion and garlic for extra veg. Only used 500g mince but the recipe definitely needs 700g to be chunky!
    Swapped the water for wine… Because wine!
    Also added salt and 2tsp sugar to cut through the tomato. Winner!!

  4. I have yet to be convinced that meat in the TM is that great…until tonight! I must admit, I was pretty wary about trying this. My last spag recipe in the TM was pretty ordinary…watery and bland. Kids and hubby were less than impressed with that one. For tonight’s effort I used the fresh ingredient version, didn’t omit any ingredients although I did have to substitute the dried basil with fresh, because I didn’t have dried, and it came out beautifully! Kids and hubby are theirs with pasta and I had mine with zoodles. So good!! One of the kids has requested it become a weekly event! Even the hubby, who still refuses to acknowledge the TM’s existence in the kitchen, was impressed. Thanks for a great recipe Nikalene!

  6. Yum. Kids thumbs up! Haven’t tried on hubby yet. He’s the fussy pasta sauce person.
    I made zoodles for me & cooked in varoma on 2nd set of 10-15 mins. Worked a treat. So full.

  8. My son LOVES this!!! I add some zuchhini and carrot when I blitz the garlic and onion for some extra veggie intake for him! Serve it on noodles and with out fail everytime he clears his plate! Thank-you sooo much

I was pretty skeptical at first as I swore I would NEVER make bolognaise in my thermie again after the tasteless, mushy attempt from the EDC… Your version was a pleasant surprise that I will definately be making again. I also love that its Phase 2 complaint, I served mine with zoodles & was able to enjoy spaghetti night with family while staying on protocol. THANK YOU!!!

  11. This was so so delicious! I don’t know how anyone couldn’t like it. I used a chicken stock concentrate jelly instead of stock paste and it made it so scrumptious!!! Unfortunately my sauce cooked a little to the bottom of the bowl so I might need to reduce cooking time but I cant wait to make this again. Thanks so much Nik for all the work you put in making these delicious meals.

  13. I was hesitant to try another spag in TM after having a couple of bland ones. This was amazing! Hubby and I loved it! Just had leftovers for lunch & I usually hate leftovers 😂😂 finally, a replacement for store bought sauce.

  14. Had this tonight! Was lovely. Added mushrooms, capsicum and 80g of chorizo! Didn’t have an passata so subbed for 700g tin tomatoes! Served with zoodles! Thanks again Nik, this recipe never fails

  15. Been a bit scared to try this recipe as other bolognese recipes I’ve tried in the thermie haven’t been great. This one was a total hit, my husband (who was a chef) said its the best bolognese he’s ever had and 12 yo asked me to never make it any other way again 😀

  16. I was skeptical after past mince dishes turned to inedible mush. Not only was this bolognese not mush it was so tasty. I’ll never make it on the stovetop again, my fussy 3 year old ate this with no complaints and in record time! Thanks for a great recipe!
