Creamy Cauliflower & Chicken Soup Thermomix recipe

  1. Ok not fans of this soup not sure why – texture/taste?
May try again with some garliic and ???
    Parmesan??

The chicken also was tooo shredded (followed instructions to a T but it looked like cat food mush)

So I am wondering if I can ‘recycle in some way

Too wet for pies (thats my usual save)

Has anyone tried it as a sauce for pasta bake (used Mexican seasoning though so a little odd flavour for pasta bakes but I was wondering if poured it over pasta and whacked some cheese on top and baked in in the oven might get away with it

Or even just poured over some boiled pasta

    any other ideas

I dont want to bin it

Could freeze and give away to a cauli soup lover I guess

  2. Made this for the first time last night and can’t believe how delicious it is!! Now I regret not making it sooner!

  3. Hi, could I please make a suggestion for a tiny tweak to Step 6.

Could it please say “Break chicken up with spatula. If using butter, add to mixer bowl.”

I have just misread this step and added the broken up chicken to the mixing bowl here… then I couldnt find the atep to add the butter. *oops*

I know its little but would help this sleep deprived Mumma… Thanks to you Nik♡ for these lovely recipes

  4. OMG HEAVEN ON A COLD WINTERS DAY!!

I don’t even like Cauli but this was delicious, so filling and very tasty it was a hit!
Another great recipe by Nik xx

  5. This was so quick & easy, I really loved it …I’ve eaten it for the past 3 days in a row… so good!!

  6. So hubby actually could not stop raving about this soup., I almost had to tell him to just shut up and enjoy it. He has requested it go on rotation at our place! Yum, well done!

  7. Thanks Nik! This was delish. I threw a few cloves of garlic into the steamer basket to steam with the chicken (thinly sliced first) then blitzed them into the cauli purée at the end. Oh, and adding Parmesan when serving… Bliss!

  8. I don’t normally bother to leave comments on websites but this soup is AMAZINGLY good. I’m doing an HGC protocol at the moment and was delighted with how much flavour this has. I am not a thermomix owner so I just poached my chicken in a saucepan in veggie stock that I had saved from cooking vegetables and used that as my chicken stock base. I boiled up my cauliflower in this stock (and added some onion and garlic) and then blitzed with a hand held blender.
    Thanks so much

  9. Wow. That was delicious. Kids had no idea that the creamy chicken soup was actually cauliflower. Thanks

  10. Nik this was delicious! Thank you again for sharing your creations. I can’t wait to eat the leftovers for breakfast… And lunch 😉

  11. Oh Nik this is amazing! I didnt have fresh cauli so used mixed frozen vege and it was delicious! Mexican Spice on the chicken is to die for! Thankyou <3

  12. I am obsessed with this recipe. Make it weekly but o use a good quality chicken stock cube. One of the yummiest things I’ve ever tasted!’

  13. I have loved every other skinnymixer’s recipes I have made so far but did not like this one at all unfortunately. Tipped it down the sink 🙁
I guess you can’t love everything but giving it a go is important.

      1. I know! It’s so disappointing when you spend time cooking and then throw it away. This is what I did to make it better…. ALWAYS add the butter. When steaming chicken add loads of sliced garlic, then add that into the bowl when shredding too. I also added a cupful (or so!) of frozen peas while it sat in the thermosever. Much tastier! I’m not sure how the peas will go on the reheat but I’ll let you know!

      2. This is what I did….

      3. Mine was really watery because I used Frozen cauliflower (they’re currently $10 each!) it was very watery so I put a glug of thick cream and another tbsp of stock and some garlic powder in. What a difference. Super delish! Topped it with bacon, pine nuts and Parmesan.

  14. I hate cauliflower. As a child my mum and aunts used to try and hide it in everything and I could always taste it.
I put this recipe off for so long and finally gave in tonight. SO GLAD I DID!!
I made it according to recipe – P2 so no butter – and added 2 tsp of curry powder as I thought this might help to disguise the taste. Well it certainly worked.

Another AMAZING healthy recipe. Thank you!

  15. Super easy and surprisingly flavourful. I’ve never tried cauliflower soup before but I find myself wishing Summer away so I can cuddle up with a nice warm bowl again soon. Reheated well too (though my husband managed to pour his serve onto his belly… kinda hilarious but yeah – it’s pretty molten!)

  16. This has become a firm favourite in our house. My husband loves this especially and its so quick and easy to do.
I freeze it for my husbands work lunches and this year is our year of getting fit and healthy so can’t wait until your new book comes out..

  17. Absolutely delicious! i was a bit worried that the 7yr olds wouldn’t like it but as with all of your recipes they asked for more!

Hubby has decided it needs to be put permanently on the menu
