skinnymixer's Lunchbox Chicken Loaf

Recently, there has been a lot of attention on deli meats & chicken loaf and what the hidden ingredients could be doing to our health long term. These media spots are really good at scaring us, but when it comes time to packing lunchboxes with a busy lifestyle – sometimes its just easier to grab deli meat… until now.

This Thermomix recipe is super easy to make, extremely delicious and better yet: preservative, additive, nut, gluten, dairy, egg, grain and refined sugar free!

It’s also budget friendly, where you will pay $18 kg from the supermarket, this should cost you around $8-$15 a kg depending on if you use free range chicken. Provided you can convince your family to give it a go, I think they will find it just as yummy as the store bought stuff.

The below flavour variations have been suggested by the Skinnymixers Community and haven’t been officially tested.

  • Red Pesto
  • Butter Chicken
  • bacon
  • turkey with finely chopped pistachios & dried cranberries
  • chilli, garlic
  • Chicken Teriyaki Burger Patties flavour
  • Roll the outside in dried herbs like Rosemary
  • Rolled in Smokey BBQ Rib Rub
  • Za’atar Chicken
  • Tandoori Chicken
  • Thai Green Chicken Curry Paste
  • Curry Mee Laksa Paste
  • Satay Chicken Marinade
  • Left out the maple & throw in a whole chipotle in adobo, added a tsp of the adobo sauce, half a char grilled capsicum & a handful of chopped coriander.
  • Smooth out to a rectangle, place prosciutto and basil leaves the using the plastic wrap roll upon itself leaving one edge free from filling to enclose. Roll log as per usual. You can also add semi dried tomatoes (squeeze to drain oil and excess liquids) or roasted capsicum (red peppers).
  • sweet chilli sauce instead of maple
  • wholegrain mustard and honey instead of maple

Ingredients

  • 500 g chicken breast - cubed small
  • 10 g olive oil
  • 1 tsp garlic powder - if you can't have it, dont use it!
  • 1 tsp paprika - if you can't have it, dont use it!
  • 1 tsp salt
  • 1 tsp maple syrup - optional, or other liquid sweetener
  • 2 large pieces of BPA free gladwrap

Instructions

  • Add all ingredients to mixer bowl, blend for 1 min 30 sec/speed 5/MC on.
  • Scrape mixture out onto piece of gladwrap. Twist the ends and roll tight, squeezing as much air out as possible. Wrap securely with second piece of gladwrap. If you need to see a visual guide watch: http://youtu.be/s1FNe9iYRUM.
  • Wash bowl roughly and add 1000 g or 35.2 oz water. Put your deep steaming tray in place and put chicken roll inside. Steam for 35 min/steaming temp/speed 3. Internal temperature should reach 74°C or 165°F for doneness.
  • Allow the roll to rest for 10 mins before refrigerating for atleast 2 hours. Unwrap and slice as needed. Keeps for 3-4 days in an airtight container in the fridge and can be sliced and frozen.

Notes

If you dont want to steam in plastic, you can use baking paper, cheesecloth and string.
Feel free to experiment with different meats and flavourings.

  1. Sorry if its been asked but how can I cook this with just a stove top and saucepans? Put it in the steamer? wrap and poach it in water in an electric fry pan on low?

    1. You could try 🙂 Make sure you keep checking the internal temp of the meat so it doesn’t overcook and dry out.

  2. Hi i have a thermomix and cooked this recipe in the varoma on top. It hasnt cooked all the way through probably only half. Am i di g something wrong?

  3. My glad wrap melted when I took it out after steaming, does it happen to anyone? It tasted perfect though, still edible?!

  4. Good recipe. Might try without the garlic as hubby complained it was a strong smell in his car until lunchtime. Might try thigh as well. My thermometer is packed away so I gave it extra cooking time to be sure it was cooked so hopefully this would make it more moist. Or try adding cauliflower puree a from another suggestion

  6. Just made this. Haven’t tried it yet coz it’s still cooling in fridge. I had to give it an extra 5 minutes to get it up to 75C
    I’m sure it’s going to taste amazing coz my fridge smells amazing right now!

    Could you do this with vegetables? Maybe like sweet potato and something green?
    I’m pregnant and not really doing meat (keep feeing really yucky and nauseous after)
    Just wondering if this would work the same way?
    Would I need eggs?

  8. I tried this for the first time this week with some bottled chillies mixed through. So, so easy & ymmy, but the texture was a bit rubbery. Did I over process it maybe?

  9. Love this recipe, loved the taste and the texture – however – not keen on the garlic smell – so I’ll leave the garlic out next time. The other half used up all the maple syrup with pancakes on the weekend and didn’t tell me – so I made it without the sweetener – it was perfect without so I won’t be adding any next time I make it either.

  12. Beautiful! We roasted garlic and onion on slow heat in the oven (to avoid any made in China garlic), blitzed in thermie then rest of the chicken (250g breast and 250g thigh), salt, herbs, paprika and steamed as instructed! Tastes great!

    1. You could just blitz it all in a food processor, roll up and steam on the stove – maybe in a bamboo steamer?

  13. Good work Nik! This is a winner in our family and particularly nice to have in the sandwich rotation. As suggested above, I might try 50% thigh and breast next time.
