skinnymixer's Lunchbox Chicken Loaf

Recently, there has been a lot of attention on deli meats & chicken loaf and what the hidden ingredients could be doing to our health long term. These media spots are really good at scaring us, but when it comes time to packing lunchboxes with a busy lifestyle – sometimes its just easier to grab deli meat… until now.

This Thermomix recipe is super easy to make, extremely delicious and better yet: preservative, additive, nut, gluten, dairy, egg, grain and refined sugar free!

It’s also budget friendly, where you will pay $18 kg from the supermarket, this should cost you around $8-$15 a kg depending on if you use free range chicken. Provided you can convince your family to give it a go, I think they will find it just as yummy as the store bought stuff.

The Skinnymixers Facebook Group absolutely loved the new ‘Back-to-School’ Lunchbox Chicken Loaf. With no preservatives and complete control over the ingredients, this recipe is popular with young and old. See the Lunchbox Chicken Loaf Recipe here.

The below flavour variations have been suggested by the Skinnymixers Community and haven’t been officially tested.

  • Red Pesto
  • Butter Chicken
  • bacon
  • turkey with finely chopped pistachios & dried cranberries
  • chilli, garlic
  • Chicken Teriyaki Burger Patties flavour
  • Roll the outside in dried herbs like Rosemary
  • Rolled in Smokey BBQ Rib Rub
  • Za’atar Chicken
  • Tandoori Chicken
  • Thai Green Chicken Curry Paste
  • Curry Mee Laksa Paste
  • Satay Chicken Marinade
  • Left out the maple & throw in a whole chipotle in adobo, added a tsp of the adobo sauce, half a char grilled capsicum & a handful of chopped coriander.
  • Smooth out to a rectangle, place prosciutto and basil leaves the using the plastic wrap roll upon itself leaving one edge free from filling to enclose. Roll log as per usual. You can also add semi dried tomatoes (squeeze to drain oil and excess liquids) or roasted capsicum (red peppers).
  • sweet chilli sauce instead of maple
  • wholegrain mustard and honey instead of maple

Ingredients

  • 500 g chicken breast - cubed small
  • 10 g olive oil
  • 1 tsp garlic powder - if you can't have it, dont use it!
  • 1 tsp paprika - if you can't have it, dont use it!
  • 1 tsp salt
  • 1 tsp maple syrup - optional, or other liquid sweetener
  • 2 large pieces of BPA free gladwrap

Instructions

  • Add all ingredients to mixer bowl, blend for 1 min 30 sec/speed 5/MC on.
  • Scrape mixture out onto piece of gladwrap. Twist the ends and roll tight, squeezing as much air out as possible. Wrap securely with second piece of gladwrap. If you need to see a visual guide watch: http://youtu.be/s1FNe9iYRUM.
  • Wash bowl roughly and add 1000 g or 35.2 oz water. Put your deep steaming tray in place and put chicken roll inside. Steam for 35 min/steaming temp/speed 3. Internal temperature should reach 74°C or 165°F for doneness.
  • Allow the roll to rest for 10 mins before refrigerating for atleast 2 hours. Unwrap and slice as needed. Keeps for 3-4 days in an airtight container in the fridge and can be sliced and frozen.

Notes

If you dont want to steam in plastic, you can use baking paper, cheesecloth and string.
Feel free to experiment with different meats and flavourings.

    Yummy recipe…just wondering if I could double…if yes…just ingredients doubled and leave cooking time the same…made the basic one…will a bit more adventurous next time

  2. Sounds like a good base recipe. I would try using a stainless steel meat press for cooking meat. And maybe a dash of smoked paprika, a little salt, a dash white pepper. You could probably use fresh ground turkey or chicken. Turkey will give it a better flavor I think.

  3. Hmm I was so excited about trying this but mine turned out a bit dry, not sure why, I did everything exact except wrapped it in baking paper instead..?

  4. Hello. I am new to thermomix cooking..in my late 70s…..I so want to make the skinny mix luncheon loaf…having found your recipient I can not make out what the” MC On “ stands for for in the cooking procedure ….please help.

  5. What is the diameter of this roll please, that would surely affect the cooking time if the roll is either too big or too small?

  6. I wrapped mine in 2 layers of cheesecloth and used twisty ties to secure. Cooked in my steamers basket with the lid on and on the stove.Also used dried rosemary instead of garlic. It unwrapped easily and is delicious. Thanks for the recipe.

  7. Sorry if its been asked but how can I cook this with just a stove top and saucepans? Put it in the steamer? wrap and poach it in water in an electric fry pan on low?

    1. You could try 🙂 Make sure you keep checking the internal temp of the meat so it doesn’t overcook and dry out.

  8. Hi i have a thermomix and cooked this recipe in the varoma on top. It hasnt cooked all the way through probably only half. Am i di g something wrong?

  10. Good recipe. Might try without the garlic as hubby complained it was a strong smell in his car until lunchtime. Might try thigh as well. My thermometer is packed away so I gave it extra cooking time to be sure it was cooked so hopefully this would make it more moist. Or try adding cauliflower puree a from another suggestion

  12. Just made this. Haven’t tried it yet coz it’s still cooling in fridge. I had to give it an extra 5 minutes to get it up to 75C
    I’m sure it’s going to taste amazing coz my fridge smells amazing right now!

    Could you do this with vegetables? Maybe like sweet potato and something green?
    I’m pregnant and not really doing meat (keep feeing really yucky and nauseous after)
    Just wondering if this would work the same way?
    Would I need eggs?

  14. I tried this for the first time this week with some bottled chillies mixed through. So, so easy & ymmy, but the texture was a bit rubbery. Did I over process it maybe?

  15. Love this recipe, loved the taste and the texture – however – not keen on the garlic smell – so I’ll leave the garlic out next time. The other half used up all the maple syrup with pancakes on the weekend and didn’t tell me – so I made it without the sweetener – it was perfect without so I won’t be adding any next time I make it either.

  18. Beautiful! We roasted garlic and onion on slow heat in the oven (to avoid any made in China garlic), blitzed in thermie then rest of the chicken (250g breast and 250g thigh), salt, herbs, paprika and steamed as instructed! Tastes great!

    1. You could just blitz it all in a food processor, roll up and steam on the stove – maybe in a bamboo steamer?

  20. Hi Nic. This may be a bit of a stupid question but I have made 2 rolls which are in the varoma as I type. I’m wondering if I will need to cook for a little longer than the 35 min recommended? Thank you in advance! Cx

  21. Added half a tub of basil, parmasen, cashew dip (woolies and aldi stock it) to the mix. Used less oil as the dip is oily itself. Had on a toastie with aoli ajd cheese. Heaven ☺

  22. I made this yesterday and just had some for lunch with lettuce, mayo and an avo on bread roll. Was totally fab. Forget the kids, I think it will be gone by tomorrow !! LOL

  24. Nik!! You’re a legend!! That was soooooooo easy to make… I made it this afternoon whilst getting kids organised for their karate lessons… And when we came home it was all ready to slice up! Oooooooooh. Lala!! My 11year old son had 3 slices and wanted more! And hubby was impressed! It tastes AWESOME!! Will be regularly made here!!! Xxx

    Though reading these comments about the plastic in now concerned, I didn’t have any bpa free cling wrap
    So I just used normal one I had in drawer… Will it be ok to eat still??

      1. I wrapped mine in baking paper then put a baby muslin cloth around it, I think a tea towel would work though! My mum said in the old days she used to use thin cloth nappies to steam stuff (the safety pin version, not an MCN 😉

        I am fantasising about doing this with turkey

  26. 1 made two of the loaves and turned one batch into meat balls by coating in rice crumbs…..each batch was as juicy and tasty as the next. I will make with spaghetti herbs and cook in a tomato base next time I make them

    1. I agree!! I have 2 daughters that are pregnant and can’t have deli (processed) meat, so they are begging me for this every couple of days.

  28. Didn’t like this at all. Had a taste and hubby and son both tasted it and wouldn’t eat it. Won’t be making this again. It also had a strange texture!

  31. It’s not safe to cook in glad wrap. It’s microwave safe yes, but not supposed to touch the food!

    And it’s not just BPA in it that’s the issue …

    At one time, plastic wrap (the generic term for thin-film polymers used to protect refrigerated food) was made from polyvinyl chloride (PVC) containing phthalates, chemicals called plasticizers used to increase flexibility. Phthalates are toxic because they disrupt hormones, and these compounds can leach into food wrapped in plastics made with them. But as of 2006, almost all plastic wraps made are phthalate-free. Unfortunately, most are now made with low-density polyethylene (LDPE) or polyvinylidene chloride (PVDC). (The exceptions are wraps used in catering and professional kitchens.) LDPE and PVDC don’t adhere as well as plastic wraps made with PVC, but more worrying is the fact that LDPE may contain diethylhexyl adipate (DEHA), another potential endocrine disruptor that has been linked to breast cancer in women and low sperm counts in men. Since manufacturers aren’t required to list the actual chemical makeup of their plastic wrap on the boxes, consumers are at risk.

    1. I have it has turned out good, nxt time i will be making a beef mince one also pork mince, not sure about spices though. I did use plastic wrap but altho it came out good i worry about the chemicals in it so will use cheesecloth.

  33. This recipe is so easy it isn’t funny! Very versatile. I added diced capsicum and used a mix of seasonings I had on hand. Sliced beautifully!

  41. It was so easy to make that I started at 11pm last night and started reading a magazine while it steamed. Smelt delicious whilst cooking and it was amazing shaved thinly on a sandwhich with lettuce and mayo.

I think it’s fair to say I was the first skinnymixer to make this after Nik released the recipe to the world 🙂 I had been looking for a healthy protein snack and just happened to have 2 chicken breasts in the fridge (all other ingredients are pretty much skinnymixer staples. It was so easy, smelled devine whilst cooking (and cooling) and i’m very very pleased with the results, looks like store bought, just tastes better and is sooooo much healthier. Because it can be frozen, mums with lots of little kiddies could probably fit 3 batches at a time in the varoma dish (i’m not sure about non TM machines) depending on how you roll them up 🙂

    1. I used thigh. It takes longer to reach temperature than breast. Best to monitor the internal temperature with a meat thermometer to ensure its cooked, and not overcooked.

    Tomorrow! I wonder if you could bread crumb it and bake/ fry it to make ‘chicken nuggets’?

    1. I make home made nuggets using the kiev mixture with gf crumbs. Nik also has a healthy nugget recipe but my kids love the kiev mix better.
