Whip up this healthy Quick Sauerkraut in no time at all with the help of the Thermomix & Thermomix Cutter!

I’m sorry but I’ve been keeping a secret! When we put together SkinnyBarbecue we left out the most delicious Quick Sauerkraut that you will ever make. For months we had delicious Reuben Sandwiches and Quick Sauerkraut on smoked Kransky Hot Dogs… and didn’t share. 

Recently  Thermomix in Australia sent the Skinnymixers HQ Test Kitchen the NEW Thermomix Cutter to test out… and it was love at first slice! This month you can get one for $99 when you purchase a TM6 (or check out the TM31 upgrade offer below!).

When the NEW Thermomix Cutter was delivered a couple of weeks ago… the obsession started again. 

Honestly the cutter came at the right time as we had a HUGE amount of prep to do for The Healthy Mix Dinners photo shoots and it seriously made the the prep go so fast for the Prawn Taco Bowls, Black Pepper Beef, Chicken Fajitas Filling, Creamy Thai Chicken Noodle Salad, Singapore Noodles & Jambalaya.

To Make the Quick Sauerkraut with the Thermomix Cutter:

  • White Cabbage – Thin Slices – Cut in wedges (removing the thick part) to fit vertical in the feeder, roll tightly 
  • Red Cabbage  – Thin Slices – Cut in wedges (removing the thick part) to fit vertical in the feeder
  • Onion – Thin Slices – Peel, Cut in wedges 

This incredible kitchen gadget can turn ordinary cabbage into flavorful sauerkraut in no time. Ingredients

  • 250 g green cabbage - thinly shaved (or red cabbage)
  • 50 g brown onion - peeled, thinly shaved
  • 90 g apple cider vinegar
  • 50 g white vinegar
  • 2 tsp sugar of choice - (optional)
  • 1 tsp caraway seeds
  • 1 tsp yellow mustard seeds
  • 1 tsp sea salt flakes or kosher salt

Instructions

  • Add all ingredients to mixer bowl. Stir for 30 sec/speed 2/MC on. Scrape mixer bowl down.
  • Cook for 10 min/100°C/speed 1/MC off. Scrape mixer bowl down and remove cabbage from around blades.
  • Cook for a further 20 min/90°C/speed 1/MC off.
  • Remove to a jar or thermoserver and allow to completely cool before serving.

Notes

Can be stored in a sterilised jar in the fridge for up to 3 weeks.
